Overnight oats?

    Maybe I am the only person who hasn't heard of these...but mmmm...I am hooked. Especially since we are gluten free, it can be hard to find high protein options for breakfast that are quick (and not eggs). If you haven't heard of them, it goes something like this:

    1/2 c uncooked rolled oats
    1/2 c greek yogurt (plain or flavored)
    1 Tbsp chia seeds
    2/3 milk, almond milk, soy milk or even water

    Mix together, cover and refrigerate overnight. That's it!!
    I made mine with raspberry chobani and then added fresh raspberries this morning. Even my teenager ate it! Super yummy, healthy and high in protein and vitamins. The chia seeds are a powerhouse ingredient.

    Any overnight oat makers have suggestions for mix-ins? I think if I changed it up enough, these could be great for filling breakfasts before school too.

    I've seen these on Pinterest, but I've never tried them. So do you eat it cold? Is it more like yogurt with texture? I guess I'm thinking oatmeal...which to me is eaten hot...so I have a hard time picturing what it would taste like.

    Also can you buy rolled oats in the regular grocery store? What about chia seeds?

    Oh... those look delish and soooo good for you... I wonder if there is a good dairy free option for the greek yogurt, have to do some research...

    Chia seed is the bomb!!! One time I accidently dumped too much into my smoothie and it made pudding LOL

    I think you eat it cold... like cereal... I actually add oatmeal to my smoothies in the morning... so good!!!

    Looks really yummy!!! I'm all about finding yummy and healthy breakfast options!!

    The oats..just regular rolled oats? Or the "steel cut" ones?

    Also *sheepish* where do you find chia seed?

    Tracy - we did eat them cold, but some people heat them up. It has more of a parfait texture/taste than oatmeal, so the coldness didn't bother me at all. (Or my kids)

    Yes, you can get rolled oats at the grocery store. They are the old-fashioned kind. Don't use steel cut or instant because they won't absorb the liquid. I got my chia seeds at the regular grocery too. I guess it depends upon how much organic/health food selection your store has. The chia is super important to the texture, so don't skip it.

    Heather - some of the recipes used soy or coconut based yogurt. We can't do soy but I am definitely going to try it with the coconut yogurt. I think mixed with some mango and real shredded coconut, it would be very delish.

    Sara, if you can't find them close to you, let me know and I will bring you some to CHA! :) For anyone else who is looking, you can order them on Amazon for about $10.

    I just saw another recipe that uses Nutella as a mix in, so I am all excited to give that one a try.

    I order mine from Amazon, but I think grocery stores are starting to carry them since they've become so popular... probably in the health food section where you would find flax seed and stuff like that.

    Oh, that's good to know that I can use other yogurt... and mango and real shredded coconut sounds YUMMY!!!

    I wonder if you could do instant steel cut and just add more liquid... I can see why the regular steel cut wouldn't work though, because you'd need the extra liquid and need the heat for overnight... I bet if you had a small crockpot you could do this with steel cut oats overnight and the extra liquid and have it warm in the morning :)

    Ok I'm going to have to look for the chia seeds on my next grocery trip. I already have the old-fashioned oats (I use them in my turkey meatloaf :)).

    I am constantly looking for fast, but healthy options for the morning. I wish I had the chia seeds right now and I'd make some for tomorrow. I bet my boys are going to get hooked on these! Thanks for the post. OH! Can you post the recipe for the Nutella version too? Yummo!

    These look fantastic Laura. . . I've recently gone gluten and dairy free. . .but, if i can sneak the dairy back in, i'm definitely going to be making this!

    I love overnight oats! So thanks for the recipe, it sounds delish!

    Here is one I usually make. Although I always skipped the brown sugar and walnuts.

    Cinnamon Raisin Swirl Overnight Oats
    -1/3 cups oats
    -1/3 cup 2% plain yogurt
    -1 Tbsp. raisins
    -1/4 tsp. cinnamon
    -2 drops vanilla
    -Salt, dash
    -Brown sugar, to taste
    -1 Tbsp. chopped walnuts
    Place first six ingredients in a bowl. Stir until thoroughly combined. Wrap and place in refrigerator overnight. Remove in the morning. Top with walnuts and brown sugar, to taste.

    Guess what? I just looked it up and they are the seeds from the Chia pets! These recipes sound delicious.

    I've got grocery shopping to do today, so I'll try to find the Chia Seeds. We have a Sprouts and a Henry's right near me, so I'm sure I'll have no problem finding it...it's just that I've never heard of it!

    I love oatmeal, but I usually buy the Snoqualamie Falls oatmeal. It's the long cooking one...I cook for 10 minutes and then let it sit for another 5 covered. I wonder if that will work, or if I need something that's a little less "bulky". Maybe I'll try it first with this, and then see about something else. I buy the Fage 0% fat greek yogurt in the big containers at Costco. I always have that on hand!!

    Thanks for letting me know about this...I bet all my guys here will love it too!

    Karen, it's the same recipe as my original post, just with 1 heaping tablespoon of Nutella added. In the morning, you can top it with a banana and some cinnamon, if desired.
