Here is a page I made a little bit ago with a few of my favorites I've been enjoying and/or experimenting with on my health journey. I haven't put them together in any layouts with the recipes copied. But I can pop a couple of my go-to's here later today.

Here is one from February

I have never ever had the sensation:
Avocodo Toast.
Keto Bread (just one) toasted this morning with spicy guac(premade from walmart)
first time having keto bread, so good!
oh my goodness! so yummy!

please find these gems! ZERO noodles! they come in all different size and color packages. Different brands. I got these one at ROSS for crying out loud! lol
rinse them very well, and cook with your meal-as they take on the flavor of what you made. so delicious!

@AnneofAlamo I don't follow keto, so I don't know for sure if the recipes I will post will be fully compliant. But this one has become one of my favorite, easy to fix for 1, quick recipes.

Sweet Potato topped with Curried Turkey - 1 serving, but very easy to scale. I will usually bake either a large sweet potato or 2 smaller ones and double the recipe for a leftover.

Ingredients:
  • Cooking spray 5 spray(s) (or you can use olive oil — I do use an olive oil sprayer)
  • Uncooked ground turkey breast 4 oz
  • Fresh ginger 1⁄2 tsp, grated
  • Apple 1⁄3 cup(s), finely diced, divded
  • Scallions 2 small, sliced, divided
  • Curry powder 3⁄4 tsp
  • Table salt 1 pinch
  • Cooked sweet potato 1 medium, hot, split open
  • Plain fat free Greek yogurt 1⁄4 cup(s)
  • Cilantro 1 Tbsp, chopped
Instructions
  1. Coat a small nonstick skillet with cooking spray; heat over medium heat. Add turkeyand ginger; cook over medium-high heat, breaking up turkey with a wooden spoon, until turkey is no longer pink, about 2 minutes.
  2. Add 1/4 cup apple, half the scallions, and curry powder; cook, stirring, 1 minute to blend flavors.
  3. Season turkey mixture with salt and spoon over potato; top with yogurt, cilantro. remaining apple, and remaining scallions
Notes: I don’t bother dividing the apple - it doesn’t cook long enough to get very mushy.

@elseepe thus us not just keto! This is a get healthy YOUR way. There are many who are going to go different!!
And I forget about casseroles! I’m intrigued with these ingredients!!
Thank you for putting it here!!

I just went and drooled in the past! You really are amazing for keeping that weight off!

@AnneofAlamo since you commented on the pizza in my layout, here is the basic recipe for a 2-ingredient dough. (I've made this one a lot in the past, but lately I've just been using lavash flat bread).

Two-Ingredient Pizza Dough - 4

1 C self-rising flour
1 C fat free Greek Yogurt

Preheat oven to 375 (or 400 — I have 2 recipes one at 375 and one at 400, but I usually use my toaster oven for which temperature is a best guesstimate)

Mix together flour and yogurt with a spatula or wooden spoon until it just starts to come together. Using hands, knead until it forms a smooth dough, about 2 minutes (it will be sticky, flour hands to help, add flour 1 TBS at a time if too sticky); let dough sit for about 5 minutes. Divide dough into 4 equal balls.

On parchment paper, roll each dough ball into a circle (around 7 or so inches) (I don’t roll this, I just use my hands to smash and push it into shape). Transfer to parchment lined baking sheet, bake about 15 minutes (until bottom is a little golden).

Add desired sauce and toppings and bake another 5 to 10 minutes.
  1. if you don’t have self-rising flour, use 1 C regular flour with 1/4 tsp salt and 1 1/2 tsp baking powder.
  2. I have done this using an equal amount of rolled oats ground into a flour
  3. Dough can be refrigerated or frozen for later use
Back tomorrow with a muffin recipe and a zucchini brownie one

This is a main staple for our Keto household!
Eggs are life! I just had some egg salad on my low carb bread. It's Kroger® CARBmaster® Multiseed Bread: 50 cals per slice, 8 g carbs, 4 g fiber, 4 g protein, 2 g fat. I know that's probably high for keto, but right now I'm just trying to keep carbs under 100 grams per day. It definitely doesn't raise by blood glucose, which is wonderful!

That sounds yummy! Ground turkey is so great for getting that protein in!

I will definitely do a layout on this, but just wanted to pop in and say my air fryer has improved my quality of life and cooking so much! I didn't cook a lot of fried foods before, although I have a talent for sautéing in butter.... Spritzing a little avocado oil on meat and then cooking it in the air fryer makes it come out perfectly cooked, still juicy, and it's fast. That has made meal prep a lot easier.

which is wonderful!
I just want to say, how much your enthusiasm and love of life makes me smile.

girl! I was so scared of the air fryer trend. My daughter had to show me how hers worked and I was amazed
I bought a little one and we wore that thing out. I got a bigger one, (not the bucket) and my real oven is sad (but clean) hahahha

The first air fryer my hubby bought, 3 Christmases ago, I was doubtful. I thought it was going to be another one of those things that sits on the counter and never gets used, like the bread machine that got retired to the garage (but has now returned to make home made pasta). I had a couple of friends suggest I try it that it was great. I'm glad I listened. Now, I thin-slice sweet potatoes and those are our french fries. They cook great in the air fryer. And although I don't make steak often, it's nice to know it will get eaten and enjoyed rather then come out like a hockey puck.
