And absolutely must have these in my freezer for quick healthy snacks. Sorry for the weird formatting.

No-Sugar-Added Oatmeal-Raisin Muffins

Makes 12
INGREDIENTS

Uncooked old fashioned rolled oats
3 cup(s), divided

Baking powder
2 tsp

Ground cinnamon
1 tsp

Table salt
1⁄2 tsp

1% low fat milk
2⁄3 cup(s)

Unsweetened applesauce
2⁄3 cup(s)

Egg
2 large egg(s), lightly beaten

Raisins
1⁄4 cup(s)

Apple
1 large, unpeeled and diced

DIRECTIONS

Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners; coat the liners with cooking spray.

In a blender, blend 1 ⅔ cups of oats on high speed until a fine flour forms, 30 seconds to 1 minute. In a large bowl, whisk together the oat flour, remaining 1 ⅓ cups oats, baking powder, cinnamon, and salt. In a medium bowl, whisk together the milk, applesauce, and eggs. Add the milk mixture to the oats mixture; stir until well combined. Fold in the raisins and apples. Divide the batter evenly among the prepared muffin cups. Bake until a wooden pick inserted in the center comes out clean, 18 to 21 minutes.

Notes: the recipe says to spray the pan with non-stick spray, but I use those non-stick parchment cups instead.
Also, sometimes I add a few mini dark chocolate chips. I've also swapped out the raisins for raspberries or blueberries (can't say as I measure those)
 
I made a point to log, and snap pics of meals over first 2 weeks-got on a bored of this food. We took a trip up our mountain and went to steak house (it was so horrible), but!!!!!!
we found a meat market that gets fish flown in from Alaska! We picked up some salmon, cod and Mahi Mahi! I cooked salmon yesterday. I am on internet search of new recipes. Regroup and feeling better.
