Yesterday was Soup Swap Day and coincidentally, we had Vegetable Soup for dinner. There's not much better on these really cold days! I think this would be so fun to do some time in the winter...a dinner party where everyone brings a different kind of soup to try. So, since we can't all get together for dinner (I can't even get out of my driveway right now lol), I thought we could all just share our favorite kinds of soup!

My favorite is probably Potato Soup, but I also love lots of others.
What's your favorite soup?
Do you have a great recipe?

I don't have much in the way of recipes because, when I make soup, I tend to just throw stuff in a pot :giggle I'd love to have some new ones, though!

Omgosh, those all sound amazing! And definitely with the crusty bread!!
 
I’m not a big soup fan but my favorite is probably a thick creamy chicken noodle with lots of noodles. Sorry I don’t have any good recipes to share.
 
I love soups, but my family isn't as excited about them as I am! Lol. My favorite is currently a sausage corner chowder that a friend of mine made at church recently. It's so good!

French Onion ... which I get at Panera. Years ago there was a restaurant at Tysons Mall where I'd get split pea soup ... it was sooooo good. I've never found another split pea that I liked.
 
What's your favorite soup?
I haven't made any soup for quite awhile but during the early parts of becoming gluten free soup became an easy meal so I rotated through a few from the grocery store - Pumpkin & Parmesan, Chicken/Beef/Lamb & Vegetable & Tomato.

Nope cause I tend to do this except I'm even lazier and use the slow cooker/crockpot!

My cousin just made this for my Mama and I had a bowl. DELISH!

Creamy White Chicken Chili

1 pound boneless chicken breasts, cubed
1 medium onion
1 1/2 tsp garlic powder
2 TBSP vegetable oil
2 cans (15 1/2 oz) great northern beans, rinsed and drained
1 can (14 1/2 oz) chicken broth
1 can (4 oz) chopped green chilies
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp white pepper
1 cup (8 oz) sour cream
1/2 cup heavy whipping cream

In large saucepan, saute chicken, onion, and garlic power in oil until chicken is no longer pink.

Add beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes

Remove from heat and stir in sour cream and heavy whipping cream.

OPTION: Transfer to crockpot to keep it warm. Also, can substitute cooked rotisserie chicken from your favorite deli/market.
 
in my house soups are mostly made up of all the things left int he fridge before the next shopping trip

Same here - soups are perfect for leftovers. I usually put all tired veggies in the mixer with some water. Mix it - pour it in a pan, add more water if needed and stock cube and spices. My son refuses to eat this - he's not eating "Träsk" (Swedish for swamp) Hence we call it Träsksoppa (Swamp Soup).

My favorite soup is probably Borscht - Ukrainan beet soup. With a big dollop of sour cream - divine.

But here's a great recipe. I found it online like 20 years ago - have no idea of origin, but it's be best recipe.

Mix-n-Match Soup

BROTH (choose one):
- Tomato cans PLUS water to equal 10 cups total
- 10 cups broth OR 4 bouillon cubes dissolved in 10 cups water

PROTEIN (choose one: 1 pound or 2 cups, cooked)
e.g ground beef, leftover meatballs or meatloaf, chicken,
turkey, ham, lentils, cooked or canned beans

GRAIN (choose 1 or 2 -- total of 2 cups)
e.g cooked rice, cooked barley, raw pasta, corn

VEGETABLES (choose 2 or more -- total of 1 - 2 cups)
raw, cooked or canned

SEASONINGS (choose 2 - 4 spices, 1 - 2 teaspoons each)
e.g. basil, cayenne (dash), chives, cumin, garlic, marjoram,
onion powder, thyme, rosemary, parsley, oregano

Bring broth to a boil in a large pot. Add all ingredients;
salt and pepper to taste; reduce heat; simmer one hour.

My comment - one hour is too long time, but I guess it depends on what you add.

Cheesy Chicken Enchilada Soup:

Ingredients


  • olive oil
  • ▢1 large onion (chopped)
  • ▢1 green bell pepper (seeded and chopped)
  • ▢10 ounce enchilada sauce ((1 can))
  • ▢8 ounce cream cheese
  • ▢14 ounce diced tomatoes ((1 can))
  • ▢1 cup black beans (drained and rinsed)
  • ▢1 cup frozen corn kernels (drained)
  • ▢2 cups chicken breasts (cooked, from 1 roast chicken, chopped)
  • ▢1 cup chicken broth (low sodium)
  • ▢2 green onions (chopped)
  • ▢1 cup mozzarella cheese (shredded)

    Instructions
    • Heat the olive oil in a Dutch oven or soup pot over medium heat.
    • Add the onion and bell pepper and cook for about 5 minutes until the onion is soft and translucent.
    • Add the enchilada sauce and cream cheese. Break down the cream cheese with a wooden spoon and cook until the cheese has completely melted.
    • Add the diced tomatoes, black beans, and frozen corn, stirring to combine.
    • Add the chopped chicken breast and chicken broth. Stir and cook for about 10 to 15 minutes, stirring occasionally, until the soup is really hot. Do not boil for too long as the cream cheese could curdle. If the soup is too thick, add a bit more chicken broth.
    • Remove from heat and top with green onions and mozzarella cheese before serving.


  • I switch out the Mozzarella for Shredded Cheddar or Taco Blend Shredded Cheese.
  • I purchase rotisserie chicken breast (pulled off of the bones) from Costco- it comes in a 2lb10oz container and I divide it up into 8 oz sections and freeze them-- I use that chicken in this recipe.
  • I use fire-roasted garlic diced tomatoes or a can of Rotel (tomatoes and peppers) instead of plain tomatoes.
  • I use a mixture of red/yellow/orange sweet mini peppers instead of the green pepper.
  • I top with either homemade toasted tortilla strips (made from cutting up flour tortillas, spraying them with a bit of olive oil and then toasting them in the oven on broil for a couple of minutes) or premade southwest-style tortilla strips.
  • The recipe blog I linked above where this recipe if from has a recipe for making your own enchilada sauce if you are unable to find a can of that.

I love soup!
We had chicken noodle soup yesterday. I made it in the crockpot.
Then tonight we had chili (not sure if that counts as soup?).
 
Ohhh going to have to try some of these recipes. I really like to use my instant pot and my favorite beef stew is instant pot beef stew on the website pressureluckcooking.
