We have so much ham leftovers from Easter. Last night I made a baked macaroni and cheese and put in cubes of ham and a can of diced tomatoes. It came out great! I still have a lot more ham, though. If you have any recipe ideas hit me up!
Oooh... following this! I have a ton leftover too and my hungriest teenager went back to college and won't be around to help eat it all. Someone else mentioned making split pea soup with leftovers and that sounded yummy to me, so I might hunt down a recipe for that. The other thing I like to use ham for is quiche. I use tiny cubes, broccoli, and onions. Yummy! I use this recipe loosely and just add my own ingredients. I was thinking about quiche, this is a great idea. I love Skinnytaste. The Mac and cheese I just made is a variation of one of hers that has broccoli, I took out the broccoli and put in the ham and tomatoes
An easy one is a ham and cheese omelet. Make a buddha bowl with ham, boiled eggs, pepper strips, corn, rice and whatever else you want in it. I like a mayo/hot sauce/garlic drizzle overtop.
I thought of another one. Make a ham salad with chopped eggs, mayo, onion, diced peppers and celery. Serve on toast or buns. Sprinkle old bay spice overtop.

Quiche & flat bread/Lebanese bread pizzas are my go-to with Xmas ham leftovers, but if eggs are still crazy expensive there, I often do 'gourmet' toasted sandwiches as well (bread, leftover ham & roast sweet potato or pumpkin (a more smooshy veg)with some cheese or pizza sauce so it sticks together better, squished in the sandwich/panini press) - anything you would chuck bacon in obviously works with ham. (Pasta Bake, or a green Mac & cheese with broccoli (stems & all), zucchini, spinach or cauliflower & ham is a good one too, the extra veggie content offsets some of the extra salt from the ham that I don't love)
Eggs Benedict, Julia Child recipe, or use powdered hollandaise sauce mix (not as good, but alot easier)
Toasted sandwiches sound really good. Yes eggs are still pricey but the price of so many things have gone up (sigh)
