Looks great! I made eggs baked in an avocado half, with bacon bits sprinkled over top, which was yummy and quite filling. I'm not following the keto diet, but I'm a pharmacist and we have quite a few patients who are trying it, so I'm trying in my own way to make sure I at least know some options for them. I wonder if you have any favourite lunch suggestions?
 
@jaharvey Thanks for the suggestions. I'm not the "usual" keto person since I don't eat meat, other than salmon & tuna. So my dining options (by choice) are somewhat limited. Up until a few months ago, I worked full-time, so I would grab a couple of raw eggs & cook them in the microwave at work. Often I'd add slices of cheese, or heat cream cheese with my scrambled eggs. DH eats meat, so I'm sure this is a pic of his plate. I bake my own breads, these were biscuits made with almond flour. I also use coconut flour for baking. For lunch now that I'm home, I have fallen in love with lettuce wraps, starting with a base of waxed paper, then add a couple of slices of large leafed lettuce slathered in mayo (actually my homemade mayo as well), cheeses, sprouts, assorted veggies depending on my mood, but always including pepperoncini. :-) I roll it up tightly with the waxed paper around it all. Unwrap as you go, it helps manage the sandwich.

I also eat raw nuts all of the time...
 
@mcurtt Wow, I'm impressed you can do this without meat, too. You obviously put a lot of thought into your meal planning. It really is a lifestyle change. Thanks for the fabulous idea about the wax paper for the lettuce wraps! I think I'll try that at lunch today and will hope to be less messy. :)

I missed this in TLP gallery, but saw it in GSO! Congrats on the awesome page, AND for KETO. We're Keto-ites too. Jaharvey, our favorite lunch is some roasted chicken (preferably dark meat...skin on) on a plate with mayo and dijon mustard, a slice of pepper jack cheese on top, then microwaved just long enough to melt the cheese. I then add avocado to mine...if we have some left-over crisp bacon, that's a welcome addition too. Dave adds pickles and/or olives to his plate. I'll have a few macadamia nuts for "dessert!" We also eat planned-overs...loving salmon, scallops, and the cauliflower-crust pizza from Costco (to which we add more mozzarella, pepperoni, sauted mushrooms and onion). Maybe this discussion should be somewhere else?? LOL
