When I was thinking about what goals to set for myself for 2025, I decided I wanted to cook more new food. I love cooking, but it's so easy you keep on making the same, same, same all the time. Hence my goal is to try at least one new recipe every week. This week I felt a little bit extra inspired, and have tried three new recipes. First, I made my own pickle. We had a lot of already cut veggies left since the weekend's taco dinner. Easy! It turned out really yummy. The next recipe was coconut cookies with salty licorice. It sounded so crazy, I just had to try it. Turned out super yummy, and now I have to try the same recipe, but with every kind of candy imaginable in it. Finally, I tried a new recipe for carrot patties. Instead of using flour or oats in them, as I usually do, it was cooked rice in them. Also, you fried the onion and the carrots, before mixing it all together, formed patties, and coated in breadcrumbs. The taste was great thanks to the fact that you fried the onion and the carrot first. This is a recipe I'll definitely will use again, because it says you can vary it wit other vegetables. We ate them with mashed potatoes and a remoulade sauce(-ish) I made with sour cream, mayo and my own pickles. Trying new recipes is definitely fun, and I look forward to continuing with this the entire year.
What a gorgeous layout & an awesome goal to set as well. It's so easy to fall into the trap of same food/recipe, different day - I know I fall into that trap regularly....there's only so much plain chicken I want to eat for dinner!
