Journal : My chillies are proliferating and even if DH likes them, he'll never be able to eat them all raw, so in order not to spoil my harvest I decided to macerate them Korean-style so I could keep them longer. The recipe said to let them stand for 72 hours, but apparently that's not enough. But at least, according to the 2 Koreans who tested my mixture, the blend is good. It's just that the chillies are still too crunchy. We'll leave them alone in the fridge and wait patiently.
