Oh gosh I bet it is difficult! Especially when dairy and corn get added to the mix of things to avoid. So glad you found the dairy free cheese substitute and that you like it, along with the grain free tortillas. Wow you never realize just what is in food and you have to be so careful. Love the way you scrapped this with the word art title, the add of spatula and oil and that wonderful composition. Perfect to draw focus on your journaling and photo. Well done. cashews as 'vegan cheese' are quite a common substitute here from what i've heard (we have several vegan extended family members), i use a few alternatives for different foods but i would be so sad without real cheese (and my daughter eats cheese like her life depends on it) so i'm glad you are finding new alternatives - corn free on top of gluten free would be quite hard i would think but it sounds like you have found a few good options!
I so get you on food being a challenge - I'm a bit picky to start with then in 2010, I became lactose intolerant (luckily I can still have hard cheeses & some Greek yogurts). I had an inkling back then that there was more to it but I wasn't being listened to by health care professionals. Then after a major symptom flare up after eating some garlic bread that I initially thought just had way too much garlic, out of nowhere in late 2022, I became intolerant to gluten, garlic, leek, cashews, dates, legumes (can have if well rinsed), inulin, psyllium in all forms in February 2023. I'm probably missing a few other odd things as well but those are the main ones. To complicate things, I can also be triggered by too much fat at once. As I was so fed up with my symptoms, I went gluten free for a month which cleared up most things - I figured it was worth a try. In March 2023, I did a FODMAP testing/reintroduction phase to see what my tolerance level was for other foods - turns out most of what I was reacting to came down to Oligo-saccharides & Disaccharides. It also explained the link to my lactose intolerance as well Luckily a few years down the track, it's somewhat manageable until a manufacturer changes a recipe!
