I might need to try this out but with Gluten Free flour. Carrot cake is one of my favorite cakes EVER!!!!!!!!!!!!!!

@Dalis It would probably be great with Gluten Free Flour and this one is not spicy like some carrot cakes.

@Carla Oh how do I make them spicy? Add nutmeg, clove and star anise.

@Carla Hubby and I are always fighting about the "perfect" carrot cake, he loves it with raisins which I DETEST! He loves raisins hates grapes and I am the other way around!~ LOL!!!
