With our stay at home orders, cooking is a necessity and a bit of entertainment all rolled into one.
Lately, we have really enjoyed making falafel for dinner once a week. It isn't anything special, just a box mix where you add water, stir, let it set up, make into patties & fry them in coconut oil. But we supplement it with an Arabic salad: mixed greens, cucumber, tomato, radish, a bit of garlic and mint, oil and lemon juice dressing. And then comes the hummus topped with paprika and parsley, drizzled with olive oil. Last week, I noticed that we were low on hummus, not enough for our falafel dinner that night, and our grocery run was two weeks away. So I looked for a recipe on line. It called for chick peas - not a problem, I had a can of them in the pantry. But then it called for tahini. Hmmm... I had some tahini in jars, but they looked like they were ancient, hiding on the shelf in back. Since the base of tahini is sesame seed, I knew that those would have gone rancid, so I tossed it all. But what to do? Along comes Google to the rescue, tahini = sesame seeds (which I had), olive oil and salt. No problem. Toasted the seeds, whirred it all together in the food processor, added the chickpeas and other ingredients for the hummus. Pulsed it a few more times and out came the best tasting hummus ever. John was sceptical at first, but I had faith. It is little things like this, being a bit adventurous, creating something out of existing staples in the pantry, that make me smile, that make me happy.
