What's for dinner? That's the dreaded question we all get everyday, right!

I need ideas! Hubby travels a lot, so most of the time it's just me and DD for dinner. She's always asking me, "What's for Dinner", but I'm all tapped out. I can't think of anything good that easy to make. I can cook, but don't enjoy doing it. Especially after teaching all day. So help a girl out and share your go-to easy meal ideas with me.
 
We are having chicken korma, actually, which I've never made before or eaten before. It's one of the delicious simmer sauces from Aldi (the tikka masala is bomb) so we'll see how it goes. It has a LOT of coconut in it & I hate the smell of coconut... but I'm trying to be a grown-up and expand my horizons and blah blah blah.

Last night we had Pioneer Woman's Hamburger Soup which is my daughter's favorite meal that I make.

So far, just wedding soup. Who knows, maybe that’s all. I could add a salad, I suppose.
 
It was just the hubs and me so crumbed chicken and mashed potato, let's pretend it was healthy and there were green veggies too. Tomorrow I will need to get some green stuff and maybe even plan a few dinners to get ahead.
 
I used to ask the kids "if they really needed to eat". It always got a lot of laughs. They knew I didn't mean it. I'm having Cheese Manicotti tonight courtesy of Michael Angelo.
 
My husband and I try to have our main meal in the middle of the day so today I am trying a new recipe in my slow cooker - pork steaks with dried apricots, capsicum and Barbecue Sauce. It is supposed to have fresh thyme leaves but I do not have that so hopefully it will still taste okay without it.
 
I am just about to head to the kitchen and whip up some gourmet...Hamburger Helper Beef Pasta :giggle I'm tired, it's easy, and I know everyone will eat it.
 
I made some roasted veggies (asparagus, red bell pepper, mushrooms), added it to some rigatoni and topped it with cream and parmesan. Also grilled up some chicken and added it to the mixture. Yum!
 
Last night I made fish tacos from a recipe meant to copy Chili's shrimp tacos. I just substituted fish instead. They were amazing. My hubby fishes a lot all year long, so I always have lot of yummy white fish in the freezer. This time I used blue gill, but any white fish will work and the recipe is for 2 so that might be good for you Kayla... and it's FAST! Which I love best. I'm the laziest cook ever.

tonight I'm making lasagna so the boys and hubby will have lots of leftovers this weekend. I'm heading to a friend's house for the weekend to scrapbook all weekend and I don't want them to starve to death while I'm gone... or eat something more than just pizza. :giggle
 
Well it was left-overs last night, choices were: turkey meatball veggie soup, Costco rotisserie chicken, and chili. Tonight there is talk of cooking Chinese dumplings and dim sum (I love the frozen food aisle at the Asian market). DD & I had lunch at Panera Bread so we had our salads for the day.

There is just 3 of us here but I still cook as if there were 5, so we have leftovers frequently.
