What are you eating lately?

We had a BLT salad for supper. Just toss together any variety of lettuce, tomatoes, corn, avocado, a little bacon, a little feta cheese and add some freshly squeezed lime juice and a drizzle of olive oil. So good!
 
I just started making Caesar salads as a base (using Ken's Light Caesar dressing) with bacon crumbled, shaved parm, croutons and then using shrimp or grilled chicken. Super quick and easy dinner!
 
started doing the green smoothies last week - bought a big bag of kale and bananas and chunked them in the freezer with frozen fruit until i am ready to eat them - thinking i am totally going to take Amy and Amber's lead on this and go in there and make individual baggies ready to blend - then i can die of shame instead of laziness for not having one for breakfast - lol!!

totally intrigued by the roasted chickpeas - where can i find that? (LOVE hummus)

what you do is this: rinse your chickpeas and then dump them on a layer of paper towels and put another layer on top, rub them nice and dry. then put them on your baking sheet, sprinkle (or spritz if you have one, I don't) them with olive oil, salt and pepper and rub it in good, using your hands. when they are all rubbed in and seasoned, toss them in the oven and bake/roast them until they're done. My oven is broken, so I always have to watch my food and don't know how long or what temp - mine only works at about 200 celsius... warning: they are addicting. even my daughter kept sneaking in after lunch and grabbing leftover chickpeas. they were almost like potato chips!

I've also seen recipes for salt and vinegar chickpeas, as well as other seasonings. The first time I tried it, it was a curry spice mix and they totally bombed. they were so gross...not sure what happened, but the salt and pepper version was easy and turned out delicious!
 
I love baked chickpeas. I toss in olive oil, salt, pepper, TeX Mex spice and garlic. I bake at 400 til golden. I cool completely and keep in a bowl on the counter. They continue to dry out over the days and get crunchier. I bake 2 cans at one time and eat them within about a week. I also eat a ton of salads with lots of veggies, sometimes grilling the veggies first. I mix equal parts of ranch dressing with plain Greek yogurt.

just reading through made me feel guilty.... we used to eat quiet well, but I had a really bad time with my health and stopped doing the right thing...and I was diagnosed with diabetes last year so I should be watching it more....when I was more up & about and could stand up to cook, things were easier...right now I have periods of 3 days to a week in which I cannot leave the bed... my daughter cooks , very well as a matter of fact, but she is still 17 and has a tendency to Ben & Jerrys & Pasta ....not the best for diabetes!!!
I'll have a look at some of the recipes and try make some stuff next time I'm up and can cook....
