Oops! Today got away from me so sorry this is a bit later than usual.

Every night my kids and I write “I am thankful for ______ because ______ so that’s my prompt for today. I look forward to hearing what you’re thankful for and why.
 
I am thankful for the playground near our house because we were able to go there tonight as a family and enjoy one of the last warm days of the year.
 
Today I'm thankful for amazing family a d friends going out of their way to make things go smooth for my special day
 
I'm thankful for my family's health because despite my hubby having Covid and my daughter having a sinus infection, everyone seems to be getting better.
 
That is a wonderful habit you're instilling Monica. I think having gratitude is important for mental health, but expressing it comes more naturally to some than others. It comes easily to me. I've been writing gratitude lists every Thanksgiving and on random occasions and journaling about it here and there most of my life. But I might not have modeled it enough for my kids and wish I'd thought of doing something like you're doing, writing down grateful thoughts, perhaps every evening before we read aloud (nightly reading aloud was something I did do very well!)

I'm grateful I learned how to make fridge oatmeal this year. It's a yummy quick and easy yet nutritious breakfast. And I need to stop typing and get back to eating it now; it's almost time to leave for work! :)

I am thankful for self-revelation because I'm always able to look inward to find out why I feel the way I do about things and then work toward correcting, fixing, repairing, working on, etc. said things.
 
I am thankful it's Friday! I have had many back to back busy work weeks (filled with really great progress on some projects, but still a LOT busier than normal). Moving forward things should settle down a bit and I'm thankful to have more open time to catch up on the work that's been piling up. :giggle

That's a fabulous idea to reread entries!

I make it slightly differently every time, but the basic thing is . . .

a cup of oats
a cup of yogurt and milk (I go heavier on the yogurt and just add milk until it's kind of soupy; mine comes out thick, and I'm thinking I'd like to add even more milk . . . I mostly use soy milk, but have also used oat and nut milks)
handfuls of seeds and nuts - I always use ground flax and chia seeds, sometimes sesame, some kind of nuts like walnuts, almonds, and/or cashews
dried fruit
also yummy, and to make it sweeter, sometimes I shred fresh apple into it
I'm considering trying banana slices someday, and bet it would work well, but I don't love bananas (just like them a little) so I haven't gotten around to that yet.
I've also heard of people adding cinnamon, but haven't done that yet. I find the fruit flavorful enough for me.

I put all that into a jar, stir well, and stick it in the fridge. The next day, the oats and dried fruit have soaked up all the milk/yogurt and it's ready to eat. It's good just like that, but I've been adding lots of cut up fruit, mostly berries, and also a mixture of tahini and maple syrup.

Ah! Now that I've typed all that out, I remembered I have the original recipe I followed the first time I made it last April. It's from the first cookbook Eamon & Bec published in 2018. They're one of my favorite travel vlog channels on YouTube, and they are vegan. Here's their recipe:

1 cup rolled oats
1 cup coconut yogurt (or milk)
½ apple, grated
1 Tbsp pumpkin seeds (or your choice)
1 Tbsp slivered almonds (or your choice)
1 Tbsp dried cranberries (or your choice)
1 Tbsp chopped dark chocolate

In bowl or jar, combine everything. Cover and refrigerate at least 4 hours. Top as you like. Keeps 5 days.

I have liked hot oatmeal since childhood, but in adulthood I've liked it less because it has always been too sweet and I often couldn't finish a bowl. So I was skeptical about fridge oats. Especially, I thought I wouldn't like it cold. Some people do heat it up to eat it and I thought I would want to do that on cold mornings, but I continue to enjoy it cold. I'm even topping it with frozen berries now that fresh berries are no longer in season. They start to thaw pretty quickly and are not hard to bite into. Berries are something I have been wanting to eat more often, for health reasons, so I'm glad I'm finding I enjoy them this way too.

I hope you liked fridge oats too. :beat

I am thankful for my husband because he suggested an impromptu drive up to Wayah Bald tonight to see the sunset. It was GORGEOUS and all of the kids were home so we all went. It was a great night.
 
I am thankful for a quieter life in this new city because life had been stressful for a long time. I am so ready for a boring, peaceful time.
