Sweet Potato Recpies?

We have a huge contest at work for the best Sweet Potato Dish, for our annual party next week.. sadly only thing I really know how to make is a casserole with sweet potatos and there are already a few people with simular dishes.. I want something unique and GOOD ., so I can win..*L*

I always roast them chopped up with red onions and lemon pepper. Maybe not the most unique, but it's yummy. lol

The recipe says "serves 12" but in my experience, it is more like 8, because people like it too much.

Oven Roasted Sweet Potatoes and Onions

INGREDIENTS:
8 medium peeled sweet potatoes, cut into 2-inch pieces
4 medium red onions, cut into 1-inch pieces
4 tablespoons extra-virgin olive oil
2 teaspoons lemon pepper
1 teaspoon salt

COOKING INSTRUCTIONS: Preheat oven to 425 degrees. Combine all ingredients in a 13 x 9 inch baking dish.
Toss to coat and bake for 35 minutes or so, until the taters are fork tender and nicely browned.

*L* so we sampled all three...and decided easiest to make and unique would be the corn bread! so I am making HUGE batches for the party..with honey/cinamon butter

Mmmm....honey/cinnamon butter sounds like the perfect pairing for this. Now I have to get myself in gear & make this too - so glad it was a hit!

My fiancee hates corn bread.. but LOVED it.. went well with our BBQ chicken
