St. Patricks' Day is a fun one for my family- and we kick it off the week with Daffodils all around the house, Corned Beef in the Crock Pot and Homemade Mint chocolate Chip Ice Cream with "Shamrock Milk" from Stew Leonards- topped off with Leprechaun Trap building! Mind you, my boys are 25 and 17- but they love the silly shenanigans! :giggle

This is so fun Renne! Are you willing to share your corner beef in the crock pot recipe? I want to try it!

oh my goodness- its silly simple!

I get the flat cut Corned Beef (not pointed- it tends to be a little fattier)
Remove from Packaging- set aside spice pack
Rinse off
Pat dry
Put in Crock Pot ( I use crock pot liners to make cleanup easier)
Pour in One LARGE can Guinness larger
Add thick cut Carrots and Celery and small potatoes scrubbed clean (I cook my potatoes separate- your choice!)
Sprinkle reserved spice rack on top
Cook on High for 4 hours or Low for 6
(I like to start on High and switch to low- after about 1 hour- the total time for Two corned beefs in one large crockpot is typically 6 hours)
When your fork can slip thru without resistance, it's done!
Remove from crockpot and place in a large lipped dish
Cover with a wet paper towel and let cool for about 30 minutes
Slice across grain
enjoy! :)
