How is it that I'm just discovering the pure ambrosia that is roasted vegetables?!?

It all started in the fall when I discovered the vegetable side dish at a local middle eastern restaurant: roasted butternut squash and brussels sprouts. I have tried to copy the dish, and got close but not perfect.

Tonight I made these carrots: Honey Roasted Carrots - Cooking Classy
The sweet flavor reminded me of those brussels sprouts at the restaurant, so I will try honey and apple cider vinegar the next time I make them.

I kept it simple (didn't do the garlic or the cheese) and had to stop myself from eating the whole head of broccoli myself. I see my future dinners being lots of roasted vegetables with a small side of meat, LOL.

Anyone have any other recipes for roasted vegetables?
 
Oh goodness.... if I didn't roast veggies I wouldn't eat half as many as I do! My kids love roasted brussels sprouts! I made a layout too! :giggle

After that, I wing it. I slice, dice, and do all kinds of things veggies. It's trial and error. I use lots of spices and mix it all up with a little olive oil. My kids love a small amount of bacon in the roasted veggies to give them some flavor too. My sons usually tell me what spices to use - Garlic & Herb, Roasted Red Pepper/Sun Dried tomatoes, Italian Dry Dressing, etc. They like to mix it up and sprinkle it all on. Gets them cooking, which I like.

A favorite in the summer is to add lemon juice, lemons, and the zest with a little pepper and salt. Let sit for awhile, roast or grill and super yummy. Similar to this, but no cheese... http://www.cookingclassy.com/2014/05/garlic-lemon-parmesan-oven-roasted-zucchini/
 
LOVE roasted veggies!

Our favorites are carrots, cauliflower and green beans. My son isn't big on veggies, but will eat piles of roasted green beans.
 
 
Yum! I love roasted veggies too. But I don't do it often enough. I must remember to come back to this thread and collect all the recipes! :D
 
I've never made them myself... except asparagus a couple times. I always forget and just end up steaming my veggies. I've had them roasted by friends or at restaurants and I always like them. I'm going to check these recipes out!

I'm also all for grilling veggies. I was at a friend's house and she served the simplest, but most satisfying, dinner: grilled zucchini, mushrooms & bell peppers, served with brown rice and hummus. YUM!

I'm a gluten-, soy- and nut-free almost Vegan (I eat fish/seafood), so I'm always looking for good recipes and meal ideas, too.
 
We roast our asparagus and brussel sprouts...so GOOD! I used to never eat those kinds of veggies...but now with roasting them, I can tolerate them!
 
We keep it simple. We roast almost every vegetable we buy by just washing, chopping, tossing with EVOO, then salt. My favorites are green beans, squash, zucchini, and okra. One of our all-time favorite dishes is a mix of the following: Tomatoes, shredded cabbage, squash, zucchini, and mushrooms tossed with EVOO and salted with a little dill. Most of our dinners consist of oven roasted veggies with a grilled lean meat. We also saute on the stove with a little EVOO and salt shredded cabbage or carrot sticks or spinach when we are in a hurry.
 
I've never been a fan of asparagus, so I'm definitely going to give that a try roasted.

Following! I love roasted veggies. It's so simple and easy. We frequently make broccoli, brussel sprouts, asparagus, green beans and carrots. I usually keep it simple and just toss them with some olive oil and sprinkle some sea salt on top.
 
Omgosh I love all these suggestions!! I love roasted veggies, too! I do asparagus and mushrooms more than anything, but I definitely see a few things here I'd love to try!

I ll get you some of our favs, Sarita spent almost 5 years as a vegetarian, she would eat fish and dairy, but our diet was based on Quorn and veggies so I got to do a lot, I managed to convince her out of vegetarianism when my mum was coming over in February 2014...as my mum is from Syria and 90% of the food she cooks (and Sarita loves) involves some form of meat.... but we still do a LOT of roasted veggies!!!

The one to go here is a recipe I got from a Sainsbury's magazine (one of the big supermarket stores here) sweet potatoes to go with Salmon fillets...
cut the sweet potatoes in medium size cubes trying to make them as even as possible, put them in a bowl, for 6 medium potatoes I used2 tablespoons of extra virgin olive oil (but you can use any cooking oil, taste better with olive oil, even if not virgin or extra virgin) 1 tablespoon of soya sauce (I use reduced salt one) and 1 & half table spoons of Worcestershire Sauce (in South America they call it English Sauce, most famous (and better quality) make is Lea & Perrins)
drop it all in the bowl with the potatoes, mix well until the potatoes are totally covered. place in a roasting tin, and if you are doing the salmon, we brush the fillets with olive oil, sprinkle with dried parsley and dried oregano, sea salt and black pepper and goes to the oven for about half hour and is all ready and yummy and tales almost no time!!!!!
Sometimes I wrap the fish in tin foil, close it tight and it cooks quicker and moist, but we like the golden browning it gets when not in the parcel....

there is a delish warm salad with butternut squash too, but I can;t find it in the web site, so I ll look iun the magizine and bring it here....is with roast apples too, amazing !!!
 
amazing recipes, and yes, same in the countries I grew up (Brazil & Argentina) never heard of rasishes any other way than those little red one in salads!!!!
also first time I heard of horseradish sauce was when I came here and Sarita's dad loved it!

funny how you all seem to know the asparagus roasted... we love them but is always either processed, bought in jars, or boiled at home, then we make a dip of oil, tiny bit of red whine vinegar, lemon juice, salt & black pepper, dip the ends in it and eat it with your hands....oh my I am SO hungry now!!!!

Yes, but I also cut about 1" off the bottoms, then use the vegetable peeler to peel the skins on the bottom half if they're tough. I usually spray/toss them with olive oil and sprinkle with sea salt.
