Ingredients


  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1 1/3 cups packed brown sugar
  • 3/4 cup fat-free milk
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 (15-ounce) can pumpkin
  • Cooking spray
  • 1/3 cup chopped walnuts
Preparation


  • Preheat oven to 350°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 7 ingredients (flour through cloves) in a large bowl; make a well in center of mixture. Combine sugar and the next 5 ingredients (sugar through pumpkin) in a bowl, and stir well with a whisk until smooth. Add to flour mixture, stirring just until moist.
  • Spoon batter into 2 (8 x 4-inch) loaf pans coated with cooking spray, and sprinkle with walnuts. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool loaves in pans 10 minutes on a wire rack; remove from pans. Cool loaves completely; cut each loaf into 12 slices.
 
oooooh yum! I have a really good pumpkin chocolate chip muffin recipe too - it's one of my favorites ... I haven't made them in a long time!
 
Ooh I have all of these ingredients on hand, I might have to try it.
 
I LOVE PUMPKIN BREAD!!! Yes, I'm yelling!! I can't make it though as I've already been sabotaging myself all week with candy. I'll eat the whole thing. I know I'll have to make it sometime this month, but I think I'll do it when my dh and oldest son are also home so they can help eat it. Only one of my boys won't eat sweet breads (strange child), so if I've got 4 grown guys helping me, I should be ok!
 
Mmmm.... sounds delicious! I think maybe that I'll pick up what I need and make it with the kids tomorrow after church.

pumpkin chocolate chip muffins are my favorite!!! i've already made a batch and plan to make more this week. :) i also have a great GF recipe that i'll share for the GF ladies around the lilypad, just as soon as i get my LO together. :)
 
Sure Rebecca! I've used this recipe for muffins, mini muffins, and bread.

Chocolate Pumpkin Muffins

1 2/3 cup flour
1 cup sugar
1 tablespoon pumpkin pie spice (or 1 ½ tsp cinnamon, 1 tsp nutmeg, ½ tsp ginger, and ¼ tsp cloves)
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
2 eggs
1 cup plain pumpkin (1/2 of a 1 lb. can)
½ cup melted butter
1 cup mini chocolate chips


Grease muffin cups. Thoroughly mix flour, sugar, spices, baking soda, baking powder, & salt. Break eggs into a different bowl. Add pumpkin and butter to eggs. Whisk until blended. Add chocolate chips. Pour over dry ingredients. Fold with a rubber spatula, just until the dry ingredients are moistened. Scoop batter evenly into muffin cups. Bake 20-25 minutes at 350o or until puffed and springy to the touch. Turn out onto rack to cool. Reheat before serving.
 
Oh darn! I missed the chat! But this recipe sounds yummy! I can't wait to give it a whirl! :)
