I'm running out of ideas as to what to make for dinner and we want something kind of light due to the heat. We did chef salad and just sandwiches & chips but I need a variety.

What's on your menus?!?!
 
Not a ton of help, we rely on salads and sandwiches (or anything grilled) this time of year, too.
 
Grilled chicken, grilled burgers, brats... we use our George Foreman grill because I don't have the patience to wait for the charcoal grill and the taste isn't that much better.

BLTs, chicken salad, etc.

That's pretty much our rotation. I told the kids today to prepare for a summer of burgers and grilling.
 
BLT's for sure.....we do burgers, brat, dogs, steak and chicken on the grill all summer.....you can also do corn on the cob on the grill but I have never done it...also we like tacos....simply because it doesn't take long to cook the meat and you only have to have your stove on for about 15 mins....also backed potatoes in the crock pot....I just wrap them in foil and leave them in all day on low...

also we love pasta salad and macaroni salad so I make that alot in the summer :)

mmm baked potatoes in the slow cooker sound fantastic any time of year... might have to make some for tomorrows dinner!
 
My mother-in-law just brought us the most amazing & light pasta. Just bowtie pasta, diced cherry tomatoes, feta cheese, olive oil. Great just the way it is, but then last night I thought I needed some added crunch so smashed up cool ranch doritos (just a few) & it was perfect. Strange I know. ;0)

if it's meat or fish it is being grilled! I don't turn that oven on from June til about SepT!
We do a lot of salads with the extra meat sliced up the next day
I like to experiment with different marinades on the meats
pestos
spicy
bbq sauces
and then do pasta/potato green salads with them...
fresh vegi's and fruit
and lots of ice cream for the kids! me, yogurt wooooooooooo
 
Grill some blacked chicken, top it with steamed spinach, sauteed mushrooms and a bit of feta cheese. It's light, fresh, easy, quick and delicious! :pigout
 
Rice/bean bowls are great. You do have to cook up some rice ahead, but once that's done, you just throw it all together. I start with a good helping of cooked rice, then black beans (I usually just crack open a can from the pantry), diced tomatoes, a bit of chopped onion, chopped avocado, and some cilantro. We often add some sliced olives and top it with some taco sauce or sour cream. If you must have your meat, these are great with nearly any cooked meat --- hamburger or steak, chicken, or pork are all good on top of it all.

At least once a week we have grilled chicken that was marinated in a greek salad dressing and then I use the same dressing (just a little) to make a pasta salad with cukes, tomatoes, a little onion, peppers (if I have them) and some feta cheese. It packs up nicely for lunch the next day too!
 
I normally grill a bunch of chicken and veggies once a week and use it for salads and sandwiches the rest of the week or use it with rice or make tacos or wraps.
 
Just thought of another yummy sandwich that everyone here loves!!!!

Cinnamon raisin bread, chicken breast, stewed apples & cream cheese. Sounds bizarre but WOW it's yummy!!!

My menu doesn't change much in the summer. We grill more, but, we do grill year-round (hubby just loves when I send him out in the snow to grill!). It's been raining a ton though and that makes grilling a challenge.
