Ash Wed is upon me here and I'm not a big fish/shellfish lover. But no meat Fridays means seafood or no meat. What are your favorite no-meat recipes?
 
Salmon! So easy, we have it once a week! I just get some salmon filets, use a little olive oil and miracle blend seasoning and bake for about 12 minutes at around 400 degrees. Then sqeeze lots of lemon on it! We also do whole wheat pasta about once a week.
 
Oh thanks Amy. I think I've made Salmon to much. Even my DH revolts against it. But it's been a loooong time so maybe I should try again.
 
hahah, yeah I overdid it for a while too, so we took a break. my oldest dd is vegan so I will ask her for ideas too. LOL. Mostly she seems to eat gross things though like beans and tofu.
 
Stuffed peppers are always good. I like to take poblano peppers and roast them for about 15 minutes in a 400 degree oven, then slit them open, seed them. Stuff the pepper with a mixture of rice (I like to use Zatarain's Jambalya rice...it's good 'n spicy), diced bell peppers, onions, mushrooms and shrimp. You put the shrimp in the rice after you take it off the heat and the residual heat from the rice cooks the shrimp. Top the stuffed pepper with Monteray Jack cheese (or Queso Fresco or Manchego) and bake for about 5 - 10 minutes. Dee-lish! You could always substitue bell peppers for the poblanos for a milder version.


**ETA: I usually chop the shrimp up into bite sized pieces. I stir it into the hot rice and put the cover back on and let it sit for about 5 minutes. Also, I sautee the veggies in olive oil and stir them into the rice at the same time as the shrimp.

-black bean burritos
-pasta fagioli made with vegi stock
-homemade mac n cheese (rachael ray has some yummy ones on her site)
-My kids have liked tuna patties...basically any canned fish with some mayo, bread crumbs and seasonings (or I've done it with mayo and a box of stuffing mix, add some hot water to soften the stuffing)
-roast up a bunch of veggies and mix with whole wheat pasta and your favorite pasta sauce

Homemade Mac N Cheese is a must. The kiddos love that.

Do you put the tuna patties on a bun? Sounds really good.

I don't eat red meat and we go meatless a lot in our house...
personally, I am WW so I watch my points... an Original Bocca Burger (frozen section) fried up in pam with a slice of WW cheddar on a Double Fiber English muffin (toasted), a little onion, lettuce, tomato and dill relish... 3 points YUMMY!

Bocca also makes like a ground version - good in easy peasy chili
to cooked ground Bocca I add 2 reg sized cans black beans (drained), 2 lrg size cans drk kidney beans(drained) & 2 cans(drained not overly so though) of diced tomatoes with oinions... heat for 15 minutes... topping we add: cheddar cheese; avocado; non fat sour cream; chopped black olives; and for me Tabasco total points value depends on your toppings

diced tomatoes with garlic & rosemary are also good with a bit of shrimp and poured over linguini... a few flakes of hot pepper flakes and parmasean... and good to go!
 
Oh Andrea! Wow 3 points. I what a great dinner after a big lunch. Do you eat dessert after that burger :).
