Soooo with those being my issues - I found this site yesterday and I'm making all soups this week lol Made the Cor/chicken chowder last night and my family thought it was awesome!

Oooo... some of those look so yummy! I want to try the Corn Chowder, White Chili, Chicken Pot Pie, and the Enchilada soups! YUM!

I have made a Rachel Ray's Italian Sub Stoup, and a Baked Potato (with cheese and bacon) that are super yummy! I love soup!

I am horrible, my life is full and I survive on a lot of packaged things. We just had an afternoon party (20 people) and just had vegetable beef soup (I cut up small small pieces of left over steak to add). It was fabulous! 4 packages, a can of diced tomatoes, and green beans!

Ten minutes and it is done. Leave to simmer until ready to serve! It was hilarious, one of the husbands asked for recipe, I handed him the empty package! He laughed and his wife said, "I can do that"
 
I bought one of those Instant Pot pressure cookers on Cyber Monday. I've made several things in it. It's been fun and kept me interested in the kitchen. I have leftover veggie soup in the fridge! (@AnneofAlamo I love making veggie soup with leftover meat and beef broth. It's my favorite!!!)
 
I love to make potato soup.

I use one stick of butter and saute 1/2 onion and 2 cloves of garlic with salt and pepper. I then add in chicken broth (about 8-10 cups). Add in diced potatoes and cook until potatoes are done, but not falling too much apart. Use a potato masher to break up some of the larger pieces. Add heavy whipping cream and continue to simmer. Top with shredded extra sharp cheddar cheese and bacon pieces. Great served with fresh, buttered bread and a salad.
 
tonight we are doing "chili soup" which is ground turkey or hamburger, kidney beans, and tomato sauce. Feel free to add in onion (my mom always did the whole onion (not chopped) for flavor but then she didn't have to bite into a piece of onion... i use chopped onion flakes or else chop an onion because we don't mind) - you could also spice the ground meat if you like... we don't because I have one kid really sensitive to anything spicy.

I have a recipe for Tortellini soup that I LOVE but we don't have due to allergies.
I just found it on my computer:

1lb of sweet Italian Sausage
1 sweet/Valida(when in season) onion diced
3 cloves of garlic diced
1 can roasted stewed tomatoes
1 can tomato sauce
1 can sliced carrots
1 can chicken broth
1 bag of frozen or refrigerated tortellini
Optional :mushrooms... however many you want

In a large Stock Pot
Brown the sausage after you cut it into bite size pieces.
Sautee onion, garlic and mushrooms
add all canned goods and let simmer. (I put it in a crock pot for the day... or on the stove bring it to a boil and then low heat for a while, or if I am in a hurry I bring it to a strong boil for 10 minutes.
Either way add Tortellini 10 minutes before serving, You cant boil them or they will break open and not be a tortelini like.

Serve topped with Italian cheese from a bag and french bread.

Our favorite soup:
Chicken Mulligatawny
  • 1⁄2 cup onion chopped
  • 2 stalks celery chopped
  • 1 carrot diced
  • 1⁄4 cup butter
  • 1 1⁄2 tablespoons all-purpose flour
  • 1 1⁄2 teaspoons curry powder
  • 4 cups chicken broth
  • 1⁄2 apple cored and chopped
  • 1⁄4 cup white rice
  • 1 chicken skinless, boneless breast half - cut into cubes
  • salt to taste
  • ground black pepper to taste
  • 1 pinch dried thyme
  • 1⁄2 cup heavy cream heated
Directions
Saute onions, celery, carrot, and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour. Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done. When serving, add hot cream.

Ohhh all of these are so awesome!! I am in a recipe rut as well. Thanks for sharing!! The crock pot Chicken Pot Pie is one of my family's all time favorites! I love soup season. I did chicken and dumplings last weekend, but this weekend I'm making a big pot of potato soup :) It's going to be cold!
 
I make chili with beans all year as it is 2nd most favorite food (after popcorn). I also make potato soup quite often.

Thanks for the link. We have been looking for a white chili recipe so I will have to try that one.

That looks yummy. I have a potato soup recipe from a Jane Fonda low fat cookbook I received as a wedding present. It doesn't use cream so it's not so white, more broth colored but sooo tasty. I made corn chowder tonight. It was yummy.

Yes, you can add corn into this recipe as well (whole kernel or creamed corn, your preference, although I tend to like the creamed corn in this thick soup).
 
I make Paula Deen's version and my kids flip. It's sooooooo easy! My 11 yr old took it for lunch to school in a thermos - his friends asked 'hey whats in there?' ---- He answered "love" lol!

LOL! This was in my head yesterday... :giggle

It was my son's 12th birthday... he loves Ramen Noodles. We don't make them often, since they are so bad for you. He also loves Chicken Noodle Soup... so as a special treat I made Chicken Ramen Noodle Soup (sans packets) with loads of veggies, chicken, and of course, Ramen Noodles, from scratch. He loved it... though TBH, it needed more broth.

Grandma's Chicken 'n' Dumpling Soup
Ingredients
  • 1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
  • (I use 3-4 lbs of Chicken breasts as it has less fat added to soup)
  • (bone & skin still on)
  • 2-1/4 quarts cold water
  • 5 chicken bouillon cubes
  • 6 whole peppercorns
  • 3 whole cloves
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1-1/2 cups chopped carrots
  • 1 cup fresh or frozen peas
  • 1 cup chopped celery
  • 1 cup chopped peeled potatoes
  • 1/4 cup chopped onion
  • 1-1/2 teaspoons seasoned salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • DUMPLINGS:
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg, beaten
  • 2 tablespoons butter, melted
  • 3/4 to 1 cup milk
    1. Place the chicken, water, bouillon, peppercorns and cloves in a stockpot. Cover and bring to a boil; skim foam. Reduce heat; cover and simmer 45-60 minutes or until chicken is tender. Strain broth; return to stockpot.
    2. Remove chicken and set aside until cool enough to handle. Remove meat from bones; discard bones and skin and cut chicken into chunks. Cool broth and skim off fat.
    3. Return chicken to stockpot with soups, vegetables and seasonings; bring to a boil. Reduce heat; cover and simmer for 1 hour. Uncover; increase heat to a gentle boil. Discard bay leaf.
    4. For dumplings, combine dry ingredients in a medium bowl. Stir in egg, butter and enough milk to make a moist stiff batter. Drop by teaspoonfuls into soup. Cover and cook without lifting the lid for 18-20 minutes.
