What's on your menu for Easter? It's always interesting to hear how the traditional foods vary from country to country.

We're skipping the usual ham fest this year and doing a brisket instead.
 
We've always done a ham but I think this year we're going for a smoked pork roast, fried potatoes, mustard greens, bacon-wrapped asparagus, and some turnips with some homemade cornbread. I'll bet you couldn't tell we're living in southern USA, huh?!?!?!
 
really? I've never heard of a traditional Easter dinner before. We generally do a special breakfast ...like pancakes...but the rest of the day is whatever!
 
Melanie, that sounds absolutely delish. Mmmm - bacon wrapped aspargus. I might have to give that try.

Eryn, that's really interesting. In the US, Easter is pretty much a ham dinner. LOL
 
We are going to throw some steaks on the grill. Not exactly your traditional German Easter dinner. But for us just to have beef at all is a special occasion, it's so darn expensive here. We will probably have baked potatoes and red cabbage with it.
 
I have no idea what to make. I just became a vegetarian so putting together a big feast has me a little baffled. Normally we would be having ham though.
 
We have a big lunch at my aunts bed and breakfast - all kinds of different foods! YUM! I am bringing a starwberry/poundcake/white choc. pudding/cool whip trifle!!!

I must say I have been enjoying ThePioneerWoman's posts about Easter foods to make!!! I am totally going to be making the carrot cake!!!
 
We're having ham (pretty normal here in the US), plus creamed potatoes and peas, pineapple souffle, asparagus (it's the season), maybe Waldorf salad (apples, celery, walnuts) and, if I'm really feeling crazy, I might bake a lemon meringue pie (but don't count on it). I cook every day and love to make special meals, but we only eat like this twice a year (Easter and Christmas). The rest of the time it's way too healthy and pretty boring!
 
It is ham feast here. We are going to my in laws house, so it is kind of potluck-ish, but that is okay. I am taking yeast rolls, coffee toffee cheesecake, and making roasted carrots. There will be green beans, coleslaw, mashed potatoes (I am assuming, anyway), broccoli salad, a coconut bunny cake and I think that is about it.

I really do enjoy a good ham and we don't usually cook one up any other time, so I always enjoy it and then, I always have to make some ham and beans later in the week! LOL
 
Nothing! HAHA. We're doing a "bring your own meat" bbq at the in-laws. Nothing fancy :)
 
truly i haven't even thought about it yet. we were planning on going to friends' & having a whole big bunch of us get together and do breakfast burritoes (odd for easter, i know, but that was the plan). then my in-laws called & said they were gonna come up & visit (from another state), so we sorta had to drop our original plans. i have yet to come up with replacement plans. maybe we'll go out & eat (lame-o!)
 
Around here, Easter buffets are another option. I hate fighting the crowds when we go out but the buffets do have a big variety to choose from.
 
For us we will be going to the in laws on Sunday. We will have a cold lunch of turkey and ham along with salads, like potato and broccoli.

My oldest dd won't be home for Easter her work load is heavy right now at University , she's done at the end of the month. I feel bad but god bless her she went out and bought a ham an potatoes an she will be making ham and scalloped potatoes for her and her one room mate that won't be going home either.
As her Facebook status say's ... she's starting her own Easter Tradition...lol

Couldn't find my photo of them but here's how I make them...

2 Cans Asparagus Pieces
1 lb Bacon
1 stick of butter
1/2 cup Brown Sugar
Garlic powder
Salt & Pepper

Cut bacon strips in half and wrap 2-4 asparagus pieces in each strip.
Secure wraps with toothpicks.
Place wrapped asparagus on a non-stick cookie sheet.
Sprinkle garlic powder, salt, and pepper to taste.
Sprinkle brown sugar over asparagus.
Cut up butter all over asparagus.

Cook in oven at 425 for about 40-50 minutes...til bacon is done.

lucky for me I picked up a bunch of Asparagus in hopes you'd share this recipe...lol Off to the kitchen I go.

we had Easter lunch at the retirement village hubby's grandma lives at. They served prime rib... since I don't eat beef I had noodles in a cheese sauce... green salad, green beans, rolls, small baked potato, & strawberry short (cookie) cake for dessert.
