Crock pot recipes

me again! :D We are having guests over for dinner tomorrow...people we don't know really well but I am going to be out all afternoon and morning so I need something easy but super tasty for the crock pot. I was thinking maybe pork carnitas cause they are yummy....but I would love your fave crock pot recipes!


PS: Garret and I have been branching out and making friends for the first time in our entire marriage. hahaha! We tend to be hermits and kinda shy so this is a big step for us!!!

I don't have too many crock pot recipes...one of our favorites is a full chicken (like for roasting) with garlic and seasoned with salt and pepper to taste, covered (though not drenched) in a bit of your favorite salad dressing...we use balsamic vinaigrette. It's soo moist and so yum! Then I serve with a nice salad or other sides.

Another newer favorite is short ribs. I never was a ribs fan, but DG is so I figured I'd try and he loooves these: Short Ribs

What are carnitas, and what is your recipe (Crystal, Sara)?

I do a corned-beef and cabbage, but this isn't really a great companies-coming kind of meal because people either love it or hate it.

Put 1 corned beef (~ 1.5 lb) in crock pot, pour in 2 cup boiling water, some pickling spices tied in a cheesecloth. Add cabbage chunks, big cubes of potatoes, carrots, quartered onions if you like. Cook on low for 8 hours.
 
I love corned beef...my mom used to do the full out Irish meal with corned beef for the family on St. Patty's every year...totally yummy!
 
One of my favorites is five spice caramel pork in the slow cooker.
Another is lamb shanks: add diced onion and lamb shanks. cover with equal quantities vege stock and red wine and cook for 6-8 hours in the slow cooker. serve with mashed potato or creamy polenta and vegies

I'm seriously going to give some of these a try though. I need to be able to have something ready for the family to eat if I've been gone or working all day. They do way too many chicken tenders, corn dogs...just things they can throw in the oven when I'm gone.

Every time I see crock pot faves, I try them. So far, either I'm doing something wrong, or we are just not crock pot kind of people.

I'm seriously going to give some of these a try though. I need to be able to have something ready for the family to eat if I've been gone or working all day. They do way too many chicken tenders, corn dogs...just things they can throw in the oven when I'm gone.
 
One thing I have learned crock potting is to always try and trim as much fat as possible off of your meats. That has helped a lot as far as the fat and oil that cooks out while in the crock pot. If you are using a meat that is fattier take it out and let it rest before you serve it. Like when I cook my ribs in the crock pot, I will take them out while I am preparing my sides.

Also unless it's a soup, I rarely cook my veggies in the crock pot...or I will add them in like half way through the day....but most times I skip the veggies since Geoff doesn't eat them anyway and I like my veggies grilled or roasted....otherwise they just get way too mushy for me.
 
Back when we were omnivores our favorites were these:

Barbecue Chicken/Pork/Beef
This one is super easy...
Place your protein of choice in the crockpot and cover with your favorite barbecue sauce. Cook on low for all day, or high for half a day. Shred the protein before serving.

Chicken Tortilla Soup

In crockpot, put 1 package chicken breasts, 1 can cream of chicken soup, 1 soup can water and 1 jar salsa. Cook on high for 5-6 hours. Take a metal spoon and break up the chicken so it's shredded and falling apart. Add 1/2 tsp cumin and any other spice that feels right (I add a pinch of garlic) Simmer on low until you are ready to eat. Serve with crushed tortilla chips and cheddar cheese on top. I have also served with diced red onions and avocados.

i do lasagna in the crock pot often. it's super easy & works out pretty well... it CAN get a little mushy or dry out on the top if it's overcooked, but even at that, it's not garbage-disposal worthy. it still works.

i have completely ruined my fair share of crock pot meals. most of the time i don't at all like how they turn out, but every now and then I get lucky.

totally lovin' this thread... and super hungry now. Thank. :) I've been needing some good crockpot recipes so this is perfect!
