Had some chiles rellenos with beans and rice, they were really good!!! :)
 
I am 12 hours difference here, so we only just had our dinner: swiss chicken with truffled mashed potatoes, grilled asparagus and carrots.
 
As we were driving back from Six Flags last night and we realized it was going to be after 8 before we got home DH asked me what I wanted for dinner. I told him that I really wanted Mexican for some reason. It wasn't until we got to the restaurant that I realized it was Cinco de Mayo. We got to have a little impromptu lesson about Cinco de Mayo and why it's celebrated in parts of Mexico and the US. Thank goodness for smart phones!

DH and I ended up splitting a pork burrito and a steak burrito for dinner and their salsa was soooo yummy. The restaurant is just around the corner from us and we've never eaten there before...we've found out they deliver so we're in trouble now..lol. Mexican food is a definite weakness of mine.
 
I ate a handful of pretzels all day (cheater....carbs) until 8 pm. no joke. I was way to busy trying not to miss anything online, lol. Then I broke down and sauteed up some mushrooms and made mushroom soup. Delish!
 
We had beef burgundy. Total comfort food.

DH is already asking this morning what we are having tonight. I'm gonna have to scan this thread to get some ideas.

I celebrated Cinco de Mayo last night by going to Mad Mex. I had a spicy burrito, some chips and guacamole, and two strawberry margaritas. It was delicious!
 
I took a bag of marinated chicken breasts out of the freezer before I left for work (I always marinate them and throw them in the freezer). Rick BBQ'd them, and then I made some pasta roni white shells and cheddar for him and the boys. He still can't swallow without pain from the surgery, so that worked well for him. I made myself a yummy salad to have with my chicken.

That's what we had! Homemade Caprese salad, bread and roasted chicken. It was so nice and light/summery. We even ate outside (even though it was a tad breezy/chilly).
 
This thread made me hungry and now I want sushi.

Saturday we had the pasta buffet at the hotel, where I ate my body weight at the dessert table, and Sunday I ordered the Pulled Pork Sandwich and my friend ordered the Reuben and we traded half of each to each other so we could have both.
 
DH and I just moved in with my mom and step dad. I'm cooking for the first time today. We are having Ceasar chicken wraps with lettuce, tomato, and Parmasean cheese. I also made home made Amish macaroni salad. I'm hoping my mom and step dad like it. Keeping my fingers crossed!
 
Tonight we had parmesan garlic baked chicken, mashed potatoes and corn on the cob - yum!
 
I was going to multi-quote to comment on how much I loved what you all had for dinner, but I was clicking on almost every post!! Yum! Brisket, sushi, caprese salad! Ah!

We only had chicken Alfredo w/ broc., caulif., & carrots.
