It's Cinco de Mayo. I learned something about it today. I was chatting with family, and one thought it was just a made-up holiday so we had an excuse to eat tacos. I learned that it actually commemorates the Mexican army defeating Napoleon III at the Battle of Puebla in 1862. The US started celebrating it to show solidarity with Mexico, although it's not celebrated as much in Mexico. Weird History!

Either way, we are having enchiladas today as a low-key celebration. I may make a tres leches cake too. How about you? Will you have Mexican food today? Do you celebrate Cinco de Mayo?

I haven’t really celebrated it since I left southern CA in 2000. I laughed yesterday when I received an automatic calendar notification alerting me it’s cinco de Mayo. I know it’s referring to the holiday but it’s also just the date, so I laughed, “Duh!” Yesterday was cuatro de Mayo and tomorrow will be seis de Mayo ....

Not sure we are doing Mexican food today or not. I have a splitting headache... so I sent eric to get lunch.. we shall see what he comes home with....lmao
As for dinner.. I may just go to my parents... and enjoy time with them and have them cook for me..lmao

We're going to try a new taco place near us that has received rave reviews. I just need to call them to make sure it's 'safe' for me to eat there. Otherwise we'll just have Taco Wednesday! I bought this cool taco serving plate a while back that I love to use when we're having tacos. It makes serving, and the subsequent clean-up, a breeze!

Growing up in small town Ohio, Cinco De Mayo was not something I learned about, nor was it celebrated here. And, nope, not going to eat any Mexican food... even if I could. Not something I ever eat.

Yes, we have celebrated Cinco de Mayo every year since 2004 when my twins were born. My husband and I went out to eat at a Mexican restaurant for Cinco and the next day I went into the hospital and my twins were born via C-section! So now we try to either eat at the same Mexican restaurant every year as a tradition and if that's impossible (they tend to get VERY packed) we at least make Mexican food at home or get takeout from other places!!

Cinco do Mayo = my grandson's birthday. This year he'll be 26. He's a HVAC installer, invariably works late, so we'll celebrate this weekend instead of tonight.

I haven't celebrated since I was much younger and our friends would all go out as a group. Although my funniest memory of a Cinco de Mayo is several years back when a huge sinkhole occured on our may downtown area streets (New Orleans) so the town had an inpromtu "Sinko de Mayo" party!

Thanks for teaching me about Cinco de Mayo! I had some tacos for lunch to celebrate :) I would make tacos for dinner but my kids are sick of me making them haha

We've never really celebrated it. I did talk to my kids about it today and when I picked up my grocery order at Wal-mart they included a little confetti party popper with a Cinco De Mayo card. So we had fun popping that. Do you guys ever get little surprises in your Wal-mart orders? We've gotten them a couple of times.

We celebrate. Having lived in Mexico, the "Mexican" food in U.S. is quite a bit different from what you would get in country. Unless you land on a restaurant with a very good chef keeping authentic recipes and methods. When I was teaching Spanish, most students thought Cinco de Mayo was Mexico's Independence day, and we had lessons on the culture and history. :) We LOVE Mexico, its people, customs, and food. Roasted goat is amazing, Really!!
We make Chilaquiles at least once a month, homemade salsa, tortillas, fish tacos.... oh my, ¡Ay ay ay!

oh, chilaquiles! I had them in Mexico and they’re muy delicioso!

I grew up in So Cal and we definitely celebrated it, even in school. Mom would make tacos from a taco kit (we thought that was such a special treat!). We’d even make Cascarones (confetti eggs) and bring them to school. Everyone did. It was almost a status symbol if someone broke an egg on your head! My sisters and I would beg mom to be careful to save egg shells and the we’d spend hours punching confetti out of scrap paper to put inside. Sometimes we’d go to the central park in town and there’d be mariachi bands playing. Such good memories!
