Christmas dinner dilemma | pad patter 12.18.17

And as much as I love my big old family (and I really do), I sometimes hate dragging the kids away from their fun and forcing everyone to get dressed up.
We decided to say no this year. It helps that we are 6 hours away, but we decided we weren't packing everything up and heading there. Instead we are staying home in jammies. And relaxing. I'm excited for it. Although, I miss the family already.
 
My mom and I had this discussion a few weeks ago. I’m always so exhausted after thanksgiving weekend because we host both sides of the family on different days at our house and all I do all weekend is cook. I really don’t love cooking anyway, so it’s especially annoying to spend my entire long weekend in the kitchen. SO I told my Mom that I wasn’t going to spend all weekend cooking again and we decided to have a bunch of grab and go foods. We are doing meat and cheese trays, fruits, veggies, nuts, taco dip and crackers, etc. all easy stuff to just put out and everyone can just eat as they get hungry. :) I also am going to make a French toast bake ahead of time for Christmas morning.
 
We do the traditional feast with my big extended family - turkey, ham, and all the fixings...but secretly? I would LOVE to stay in pajamas and have enchiladas or lasagna or something make-ahead like that. By the time Christmas rolls around, I'm kind of done with all the rich holiday food and ready for something new! This is me exactly! I like staying home on Christmas Day relaxing and letting the kids enjoy their toys. I'm so over the holidays already and the BIG day isn't even here. I'd be a Grinch and skip Christmas, but I'm looking forward to skyping with my son on Christmas Day. He's been gone for 18 months serving an LDS mission and we only get to skype on Christmas and Mother's Day. There's no way, I'm letting anything get in the way of our skype call! Talking to him is all I want for Christmas!
 
So many awesome ideas here. THANKS! I just knew I could count on my scrappin friends to save the day! I'm gonna run some of these ideas by my family and see what they want to eat. I'm leaning towards a crockpot soup, a casserole/lasagna or a meat/cheese tray. I also have a shrimp ring in the freezer that I'll pull out at some point too.

I love the grab and go ideas - deli meats, appetizers, fun stuff. Frozen enchiladas sound super yummy.

My grocery has soups that you can make by just adding a few ingredients too. Chicken Tortilla Soup and you add rotisserie chicken and chicken broth. Corn chowder and you add cream and chicken broth, and I add more corn, and depending on hunger of my family, I add some chicken, lol! Very tasty and super easy, or do beforehand.
 
My whole family goes to my mom's church on Christmas Eve and then has a late dinner afterwards -- soup & crackers/biscuits. This year it's Pioneer Woman's Hamburger Soup which is my fave.

We have a full traditional meal on Christmas Day at my parents' house. My mom makes the ham, mashed potatoes, sweet potatoes, & dessert. The rest of us bring a side or a salad.
