I'm heading to Waikiki for a week in August. I haven't been for 35 years so I'm sure things have changed.

Is there anything I absolutely must do or anywhere I really need to go to eat? My partner isn't a seafood eater. We do have a full day Island Circle tour booked as well as ATV tour at Kualoa Ranch and a Luau.
 
Haven't ever been but let me tag our resident Hawai'i rep, Liana @yellowpeep I'm sure she has some local knowledge but even if not, i'm sure you'll have a blast and find some non-seafood places
 
How exciting Kirstie!! I have never been and only know a little bit about it from books but I think you HAVE to go to DUKE's in Waikiki because of it turning up in most of Susan Stoker's SEAL Team Hawaii books :giggle which I know you liked!

Maybe @yellowpeep might be able to give you some hints. I believe she was from there and still has family there!
 
I think you need to take me with you! :giggle I have no knowledge, but hope you have a wonderful time! If I were going, I would definitely want to go scuba diving and/or snorkleing!

How exciting! Kualoa is owned by dear friends of mine and they will treat you well. Haven't been to Duke's in 18 years but it was fun (and crowded) when I went. Lots of memorabilia. On Sundays, Henry Kapono plays live there and he's a musical legend on the island. (If you can't catch him live, he usually livestreams his sets on his Facebook page.)
My very favorite beach is a tiny beach called Kaiona, which is on the east side of the island. Some might call it Waimanalo beach but it's a little ways away from there. Avoid on weekends-- lots of locals have big celebrations there-- and try to get there as early as possible (at sunrise on M-Th, you will usually be one of the only people there). I see turtles there all the time when snorkeling and it's really beautiful (see photo). If you want to see a good sunrise, you can go there or to Sandy's or Makapu'u beaches (also on the east side). There are lots of locals living and working nearby and not a lot of tourists. The locals are humble and kind and appreciate it when tourists keep a low profile.
Going around the island can be so fun and beautiful and because of two lane roads, it can also be fraught with traffic so it's good that someone else is driving. There are lots of places that are well-known but because of this, they are loaded with tourists (like Matsumotos shave ice in Haleiwa). They do pretty good crowd control there but if you don't like crowds, stick with recommendations that are off the beaten path. Like if you want great shave ice and you do make it to the east side of the island, Kokonut's is a great place to go.
Lots of east side recommendations because that's where I grew up and where my family lives. :) I don't do a lot of touristy things but most opportunities are great and super fun. Reach out to me if you have any other questions. Aloha!

We have been to Oahu 3x and it is my favorite island. Some folks don't like it because of the city, but I think it is the best of both worlds. We are big foodies and have been on a food tour there. I made a layout about it, and here it is. I know @yellowpeep mentioned Matsumotos shave ice (on north shore). Their shave ice is good but I actually preferred Waiola Shave ice. It's a softer ice and we loved t so much we bought the same shave ice machine they use at the store for our house! Also great food trucks. The Dole plantation is a fun outing. Be sure to try the Dole Whip.


This temple is lovely and free to explore.


You can hike Diamond Head. I would suggest in the early morning.


We always rent a car and explore. Here we found a blow hole on the side of the road and stopped. While we were enjoying the views we were hit by a wave. You can watch the video if you want.


We also try to make it to Pearl Harbor. You can easily spend a whole day there. There is a fantastic tour of the USS Missouri that I recommend as well as going out to the memorial.

I hope you have a wonderful trip Kirstie! I loved sunrise and sunset at the beach and snorkeling with sea turtles.
