Any Celiac or Gluten Reduced Peeps here?

So my oldest daughter was diagnosed with Celiac last week. :dizzy
We are meeting with the pediatric nutritionist today, so I am sure we will get some great info. I've already started reading a few books about it. Anyone have experience with Celiac or eat gluten reduced/free? I would love some tips!
 
I'm gluten intolerant, Laura.

I find it not too bad, really. You just need to get out of the habit of grabbing a sandwich! At least that's always been the biggest problem for me - lunch is the hardest meal.

The shopping trips are awful to start with (leave lots of time for reading ingredients) but I soon got the hang of what's gluten free and what isn't. I haven't found a GF bread yet that isn't positively mediocre but we just eat less bread now and eat more rice, pasta (Buckwheat is my favourite), quinoa (a major discovery for me as I'd never heard of it before!) GF pancakes... I found a great pizza base flour mix (called Isabel's but it might just be a UK thing).

I generally try to cook from scratch (other than flour mixes as I can't even find half the flours I'd need) as then I know exactly what's going in there and it saves me a lot of frustration in the supermarket. Eating out is by far the hardest thing, as I'm never really certain that anyone in the kitchen actually understands, the waiting staff often haven't got a clue and I've been caught out a few times by being 'glutened'.

i have a few good friends who are gluten-free, and they seem to do just fine! obviously more consciencious about what they choose for foods, but i think once you get the hang of it, you'll do great!

just an fyi, i saw in the baking isle at our grocery store the other day a few brand-name cake mixes that are GF. so that's great for a little treat to maybe help her get adjusted to a different eating lifestyle. also, try things like chex cerial which is also GF, and make snack mixes and such from that to have a GF after-school snack or on-the-go thing. i know that my friends have all just basically found ways to eliminate breads from regular dinners and such, and found GF alternatives for the holidays and special events. it is most definitely doable!
 
we aren't gluten free, but we are corn & soy free... and I have come to love Trader Joe's & Whole Foods! You might want to check with stores like them too... the seem to have everyone covered!

am gluten-intolerant :(
it does require time-consuming label-reading at first
but you will get a list of what you can eat, and what you can't, and food-shopping does gets easier
there are, thankfully, alot more products available at the grocery stored labeled "gluten-free"
and there are online GF recipes too!

I eat alot of rice and fresh vegetables, corn doesn't seem to bother me, so I can do corn tortillas in place of pita pockets, etc
finding a cereal for breakfast was no easy feat, and I usually buy rice chex
lunch is the hardest meal for me, no more grabbing a quick sandwich, hamburger, or slice of pizza etc

once I was diagnosed and followed the diet... I felt SO much better :)

Thanks for the input, ladies! We had a pretty good first week! Whole Foods is definitely going to be my main spot for groceries.

For those who have gone GF, how long did it take for your symptoms to abate once you started eating clean?
 
Trader Joe's has boxed GF Mac & Cheese for $1.99! Looks a lot like Kraft so kids don't feel left out!
 
I can´t help out with any infor or recipes, but just wanted to say good luck for your daughter, I´m sure once the things are sorted out, it´s a good life, even with this intolerance!
 
By the way, there are lots of great blogs and groups/pages on fb with recipes and help :). Gluten free girl and the chef is a good one, as is gluten free goddess. It's a little scary with all the many many different types of flours they use. I can't get most of them here so I muddle along as best I can with a standard mix from our grocery store.
