Yes, you can delete conversations. Just click the checkbox to the left of the conversation title. A menu will pop up that asks what action you want to take. Simply select delete. You can select several conversations at once.

"Leave Conversations" removes it from your box. You will have the choice to Accept or Ignore any future responses from the other participant(s) in the conversation.

I've noticed that when I upload a layout in one of the categories in the gallery I automatically get subscribed to that category. Is there something I need to uncheck when uploading that I missed?

In your profile under "Preferences" you will want to uncheck "Automatically watch categories that you add media to...". (I have all four of the Automatically ones unchecked.)
