So, one of my biggest hurdles to getting my MOC-mojo on is the never ending question "Mom, what's for dinner?" So I thought it might be good to share a few favorite recipes so we can all build a go-to dinner arsenal!

Please share a recipe you love with us - Here is one of my favorites! (you can make this in a crock pot, or on the stovetop)

Crock Pot Chicken Tortilla Soup

Ingredients:
1 lb. chicken breasts
1 medium onion, diced
2 garlic cloves, minced
1 (15 0z.) can beef broth
1 cup water
1 can (15 oz.) corn, undrained
1 can (15 oz.) diced tomatoes and green chiles, undrained
1 (11 oz.) can enchilada sauce
1 packet taco seasoning
½ tsp. chili powder
salt & pepper, to taste
shredded cheese, for topping
crunchy tortilla strips, for topping

Directions:
Place chicken breasts in the bottom of your crock pot. Season with a bit of salt & pepper.
Add in diced onions and minced garlic.

Then pour in beef stock, corn, diced tomatoes and enchilada sauce.
Sprinkle with taco seasoning and chili powder. Then give it all a good stir.


Put the lid on and cook on low for about 8-10 hours.

About 10-15 minutes before serving, take the chicken breasts out and shred them using two forks. The chicken will shred very easily.

Then put shredded chicken back in pot. Stir again. Let cook for additional 15 minutes.

Then serve and top with shredded cheese and crispy tortilla strips.

Cook’s Notes: Feel free to add any beans you like in here. Black beans go well with this soup. Also, some folks like to top this with diced avocado as well as fresh cilantro.

Y'know i was thinking this same thing the other day - i ended up making like a vat of bolognese sauce to freeze thinking i can 1. wrap jacket potatoes in foil and leave them in the slow cooker for a few hours then tip reheated sauce over; 2. do pasta one nite; 3.mix it into some cooked rice.... i figured i could add some taco mix to it while reheating and alwaysjust call it 'nacho mince' or something another nite too but that's about as far as i got on this MOC dinners topic- 4 meals out of 1 pot of cooking isn't too bad....

we use the slow cooker a lot too but mostly with a packet sauce mix or just meat with some chicken stock to make like shredded beef and salad wraps or something because DD is picky and very plain Jane about food (she won't even eat the tortilla wrap, she has it on a bread roll). i have searched pinterest over and over for slow cooker stuff but it all sounds pretty much the same after a while and some items like packet ranch dressing mix (which i figure is basically a particular mix of herbs that features in dozens of crockpot recipes) we don't have here so i have hit a few deadends with searches.

my quick go to is Cous Cous Salad at the moment - you just boil the jug, tip the water over it and let it sit while you cut up some veg (or do something else/scrap). It's summer here so we just add some drained tin corn kernals, diced capsicum/red pepper and cucumber, some baby spinach and grated carrot (and if there's leftover roast chicken, it's always good and i add some french dressing to everyone but DD's)
 
Chilli

1lb lean ground beef
1 can diced tomatoes
1 jar medium salsa
1 can each of red kidney beans, white kidney beans and black beans
1 packet taco seasoning mix

Brown ground beef and add taco seasoning.
Transfer to crockpot and add other ingredients. Mix together.
Cook on low for 6 hours (can do 7 as well)
Serve with sour cream, shredded cheese.
We also like to use Tostitos scoops for dipping.
 
Quick meals are my specialty....I hate spending lots of time in the kitchen. This wkend I'm doing up big batches of chili, spaghetti sauce and taco soup to heat up throughout the month. I also plan on eating tacos, big salads with chicken strips and grilled cheese and tomato soup. Easy peasy.
 
Super easy and fast tomato soup. ( it is really filling and we eat it as a main meal )


1 onion
1 large tin cocktail sausages
1 egg per person
soup noodles (pasta)
1-2 packets (tins) of tomato soup . it depends how many you cook for. You should allow enough for 1 large plate each
Chop the onion fairly fine and soften it by frying it gently in a little oil.
Add the soup,and bring to the boil. At the same time put a pot of water on for the soup noodles ,and add them when the water boils.
Add 1 egg per person to the soup, ( crack it in a cup first and "slide" it in the boiling soup.)
when the eggs have gone a little solid add the drained sausages and let the whole thing boil for 5 minutes, Remove from heat
when you are ready to eat (not before or it becomes a mess ) add the boiled noodles to the soup.
Job done It takes about 20 min in all,and half that time is because you have to wait for the water to boil. :-)

We occasionally have "helpie selfie" dinner…meaning whatever you can find in the fridge, freezer or cabinet and make yourself is fair game! (Mom didn't meal plan or was too tired or lazy to cook tonight) LOL Maybe we'll just have A LOT of those nights in January!!!

I don't use the packets, I make my own using a recipe like this : http://www.gimmesomeoven.com/homemade-ranch-seasoning-mix/

I add some paprika or cayenne pepper (just a dash) depending on who is eating it.
 
thanks so much for that recipe!! can't say i've ever heard of dried buttermilk but will look for it!
Here, it's in the aisles, not by the milk, usually by the evaporated or condensed milk. It's a shelf stable item. I hope you find it! I use it all the time instead of fresh buttermilk because the fresh always spoils before we use it in enough meals. It's great in pancakes and Waffles too.
 
um recipe? Put the stouffer's frozen veggie lasagna in the oven and let it cook for 2 hours. Oh...here's another one. Take two slices of bread and put whatever you want in between. If you wanna get fancy, you can microwave some soup too!
 
I made the Chicken Tortilla Soup-- I loved it but my kids weren't such big fans. Need to plan some ideas...
