Butternut Squash NSR

We usually don't see butternut squash here in Norway, but today I saw them in a grocery store. I wanted to get one, just because it reminds me of when I used to live in the US, but didn't because I couldn't think of a recipe that required it... so now I figured I would ask here, any fave buttersnut recipe's to share?

oh, i LOVE butternut squash!! I just slice it in half smother it with butter and brown sugar and bake.
(takes a long time to bake depending on the size)
soooooooooo yummy. you can also cube it and do it in the slow cooker.
 
Seems like plain and simple is the way to go. I'm definitely picking up some of these when I'm in the store next time since they are so easy to prepare!
 
I do like Jacque, cut in half, a little butter brown sugar and cinnamon and bake it.
 
We love squash and the way DH makes it is to slice it into aluminum foil with slices of butter, salt & pepper, garlic, and some onion and then cook it on the grill for about 45 minutes. It's delicious!

I LOVE butternut squash. That puree is joyousness. I make that every Thanksgiving and Christmas now too.

It is also really delicious in a risotto, or soup, or roasted. YUM.

I would describe the taste as similar to a sweet potato. There is a touch of sweet to it..but not overwhelming. And with subtle tones of pumpkin. (not the seasoned pumpkin pie pumpkin, but just plain pumpkin). It's not a particularly strong flavor, IMO..and so I think that's why it works so well in recipes. And why you can go sweet with it or savory.
 
I cook it like Jacque, too. Or I peel and cube it, then boil like potatoes and mash it up with butter and brown sugar. Depends on how impatient I am. :)
 
I make a roasted butternut squash and pear soup with it recipe from Eatingwell.com
It has tomatoes and leeks and is absolutely divine. My fave pumpkin soup recipe ever!
