Husband Friendly Christmas Baking

This year hubby's office is having their annual holiday lunch (next week) which actually spans over a number of days. Everyone volunteers to bring in something homemade, and DH thought some baked treats as part of the desserts would be a good idea. Last year I did all the baking and sent it in with him, but this year they've set out "rules" - nothing store bought and homemade means you've actually made it yourself.. I find this equally funny and scary - I don't know if he's EVER successfully baked anything. All he's asked is that I be around while this is going on in case he has any questions. I have a feeling I might enjoy sitting with a glass of wine and watching all of this go down. :wine

My question to you - I have tons of holiday recipes, but do you have any that are super easy? Like husband easy.

One of my all time favorite dessert recipes for these events is soooo easy, even a husband can do it. :giggle

Barking Crackers
Preheat oven to 350 degrees
Line a cookie sheet with foil or parchment paper. (I prefer parchment)
Line about 40 saltines/soda crackers up, end to end and touching, on the cookie sheet

Bring 1 cup of butter and 1 cup of brown sugar to a boil for about 3 minutes, stirring constantly. Pour evenly over the crackers.
Bake for 5 minutes. Remove from oven and pour an entire large bag of chocolate chips over the cracker mixture. Let sit for 5 minutes and spread with a spatula. Let it cool completely. (I sometimes put them outside for fast cooling.)

Break apart into the crackers and enjoy. It makes a sweet/salty toffee which is realllllly amazing.
 
Oh... I've made those before and they are really good Laura! I forgot about them though and I think I might even make those this week!
 
Thanks, those do sound easy peasy, Laura! He's been going through my recipe books and pointing out every overly involved recipe I have, but THESE are more his speed I think!
 
That recipe sounds delicious! Now for me to stop ROFL 'cause if my DH was in the kitchen....look out! Every bowl, pan, utensil would be dirty! Good Luck!
 
This is so funny! Let us know how it turns out! I don't have any 'husband-safe' recipes 'cause DH's the one who does the cooking around here, and does a darn good job at it. :)
 
Laura... I totally made your recipe last night. It's my treat day at work today and normally I make my breakfast burritos for everyone, but since I get to work at 6:45 now and nobody else arrives until 8:00 I didn't want them to be all cold and I didn't want to get up any earlier than I had to, so I bought Panera bagels, but I made this so I could say I at least made something myself. I snuck a piece this morning and it's SO good. :)

These are no bake yummies

Chocolate Peanut Sweeties

1 cup peanut butter* 1/2 cup butter (no substitutes), softened 3 cups confectioners' sugar 5 dozen miniature pretzel twists (about 3 cups) 1 1/2 chocolate chips 1 tablespoon vegetable oil

In a mixing bowl, beat peanut butter and butter until smooth. Beat in confectioners' sugar until combined.

Shape into 1-in. balls; press one on each pretzel. Place on waxed paper-lined http://www.cooking.com/recipes-and-more/recipes/Chocolate-Peanut-Sweeties-recipe-6759.aspx#. Refrigerate until peanut butter mixture is firm, about 1 hour.

In a microwave-safe bowl or heavy saucepan, melt chocolate chips and oil.

Dip the peanut butter ball into chocolate. Return to baking sheet, pretzel side down. Refrigerate for at least 30 minutes before serving. Store in the refrigerator.
