Salted Caramel Apple Pie
Ingredients
  • homemade pie crust (my recipe makes 2 crusts; 1 for bottom and 1 for lattice top)
  • homemade salted caramel sauce
  • 6 large apples, cored, peeled, and thinly sliced (approx 10–12 cups total – use a variety for better flavor, such as Pink Lady, Granny Smith, or Honey Crisp)*
  • 1/2 cup (100g) granulated sugar
  • 2 Tablespoons (30ml) fresh lemon juice
  • 1/4 cup (31g) all-purpose flour (spoon & leveled)
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 and 1/2 teaspoons ground cinnamon
  • egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk
  • optional: coarse sugar for sprinkling on crust
Instructions
  1. Read all of the directions that I wrote in this post before beginning the following recipe. It will help you!
  2. The crust: Prepare my pie crust recipe through step 5.
  3. Make the caramel using my step-by-step photos as a visual guide. You can do this as you wait for the pie dough to chill.
  4. Next, make the apple filling as the dough is still chilling: Place apple slices into a very large bowl. Add sugar, lemon juice, flour, cloves, nutmeg, and cinnamon. Gently toss to combine. Set aside.
  5. Roll out the chilled pie dough: On a floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish. Tuck it in with your fingers, making sure it is smooth. With a small and sharp knife, trim the extra overhang of crust and discard.
  6. Fill the pie crust with the apples. There are a lot of apples, but pile them tightly and very high. Drizzle with 1/2 cup of the salted caramel, reserving the rest for topping.
  7. Preheat oven to 400°F (204°C).
  8. Make the lattice crust: Remove the other disc of chilled pie dough from the refrigerator. Roll the dough out, 12 inches diameter. Using a pastry wheel, sharp knife, or pizza cutter, cut 16 strips 1/2 inch wide. I always use a clean measuring tape or ruler as a guide to assure the lines are straight. Carefully thread the strips over and under one another, pulling back strips as necessary to weave. Using a small and sharp knife, trim the extra overhang. Crimp the edges of the dough with a fork or your fingers.
  9. Lightly brush the lattice top with the egg wash. Sprinkle with coarse sugar.
  10. Place the pie onto a large baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 375°F (190°C) and bake for an additional 40-50 minutes. If the top of your pie is getting too brown, cover loosely with aluminum foil. The pie will be done when the caramel begins to bubble up. A small knife inserted inside should come out relatively clean.
  11. Allow the pie to cool for 4 hours before serving. Drizzle the pie with the extra caramel sauce to serve. This apple pie is best served on the same day, but it can be covered tightly and stored in the refrigerator for up to 3 days.

I like pie. I just don't think to make it. Except Pizza pie. That recipe looks so yummy though! I need to try it out.
 
at the school where I worked there were pancakes with brown sugar for all students on pi day ...
The sugar was sprinkled on it with a pi template ...
 
I was going to make one, but didn't get around to it. Ha ha. I love pies but they always seem like more work than the result. Maybe I can make one this week. We have a couple of recipes for a good chocolate pudding/mousse/silk type pie.

Banoffee pie

Serves: 12

Ingredients

For the base:
  • 100g butter, melted (7.05 Tbsp)
  • 225g light digestive biscuits, crushed (1 cup)
  • For the caramel:
  • 75g butter (1/3 cup)
  • 75g dark brown soft sugar (3/8 cups)
  • 397g can Carnation Condensed Milk (1 can)
For the top:
  • 2 medium bananas
  • 150ml carton whipping cream, lightly whipped
  • Cocoa powder, to dust
20cm loose-bottomed cake tin, greased

    10 mins
Cook time 10 mins

Here's how easy it is...

1. Put the biscuit crumbs in your bowl, then tip in the melted butter and mix it all together. Spoon this into the base and press against the bottom and sides – this is the base of the banoffee pie recipe. Chill it for ten minutes.

2. Place 75g butter and sugar into a non-stick saucepan over a low heat, stirring all the time until the sugar has dissolved. Add the condensed milk and bring to a rapid boil for about a minute, stirring all the time for a thick golden caramel. Spread the caramel over the base, cool and then chill for about 1 hour, until firm or until ready to serve.

3. Carefully lift the pie from the tin and place on a serving plate. Slice the bananas; fold half of them into the softly whipped cream and spoon over the base. Decorate with the remaining bananas and finish with dusting cocoa powder on top.

  1. To get the most out of our banoffee pie recipe, make sure that you really boil the filling for at least 1 minute to be sure it sets to a fantastically tasty squidgy caramel. You can also use grated chocolate to decorate the pie!

I like to eat pies.. does that count? My future mil makes this thick chocolate pie..it is like the thick chocolate from inside an icecream cake from dairy queen..you know that chocolate layer.. but a whole pie of it on this Graham cracker crust.. it's the best in the world

I can't believe I missed it.
I usually buy a pie and take photos.
This year the jolly load shedding has totally got me, ok and the covid that makes that I don't even know what day of the week it is because they're all the same. 2 hours of no electricity twice a day gets old really fast.
 
You pie lovers will love this! We have a PIE SHOP about 5 up the road. Nancy's Pie Shop! You walk in there and you're in Pie Heaven. My hubby has been there 3 times in the last week. My favorite lately has been coconut cream pie!

It's really not a good thing, Monica. Hahaha Every time we go by there, we want to stop in. You can get just a piece or two, or you can get the whole pie. If she doesn't have the kind you want, she'll make it and have it ready the next day.

I like to try every flavor so I would be in big trouble haha
 
Here are the three pies I make or hubby makes: Pecan pie, a frozen caramel pie, and an apple pie that i use cinnamon rolls as a crust.

The only pies I don't really like are pumpkin and pecan, and peanut butter is a little rich for me. But I'll take all the others. I'm looking to see if I have any recipes handy. I have a bunch pinned to try!
 
I actually had no plans on making or consuming pie on pie day, but yesterday my hubby had worked all night and so to cheer him up we decided we would make a pie (he likes math and he likes pie). He likes key lime pie and so I found a recipe on-line where we had mostly all the ingredients (because I really didn't want to go to the store). Well, turns out we didn't have enough lime juice...so we added lemon & orange juice and it ended up being delicious. My daughter actually made it and also made a homemade graham cracker crust (the crust was more amazing than the filling!).

Seriously so easy & delicious.
