rotisserie chicken | pad patter 6.2.20

Since I can't eat red meat, you'd think I'd basically be living on the Costco $5 chicken lol. DH grills/smokes chicken really well, so thankfully I can still eat lots of yummy chicken during quarantine. He usually grills a whole chicken (or all the parts of a chicken, if it isn't actually whole) and cuts it up/stores it for the week. I love chicken Caesar salad wraps so I warm some up for those.

Lately DD has been eating cold chicken for lunch. Like, literally, just cold chicken plucked from the fridge container and put on a plate (well, she uses a fork, of course lol). :cornfused Honestly, between the covid stuff and the HVAC dying and the cabinet almost falling off the wall (that happened today), I don't care anymore if she has cold chicken as a meal. If I don't have to fuss, then what's the big deal?
 
Cold chicken is my favorite!! I like it much better straight out of the fridge! Even fried chicken I prefer cold :)

okay, joke gifs aside, I will admit cold fried chicken is...not my thing. But if we ever meet IRL, I'll make sure Gen and you have a bucket of fridge-cold fried chicken to snack on! :giggle
 
We get ours from different places but usually in the summer at farmers markets but in the non-season we get them at either Market District, Whole Foods and sometimes CostCo. I love making these Sour Cream Chicken Enchiladas, homemade chicken salad, or making soup!
 
I get mine at Costco... they also sell it picked off the bones (not quite shredded, but boneless chunks of breast meat).
I use it for lots of recipes but one that gets requested a lot is Veggie Loaded Rotisserie Chicken Casserole
I do use fresh veggies, but as a shortcut frozen would work too. Topped with those Whisps cheese crisps crunched up.
 
I do like this a lot. We get ours at Publix or occasionally Sam's Club. I prefer Costo and Hubby prefers Sam's. He normally shops, so I let him go where he wants to go.
 
I really love when I make it myself, but it's getting so expensive and Costco's one is pretty good.
We make our own a lot too. It's pretty easy. Recently a group of girlfriends and I did a Zoom cook-a-long and roasted a chicken in a dutch oven and it was so easy and delicious - and relatively quick too! We typically just eat ours with sides. Sometimes we will repurpose the left overs for enchiladas or something else.

Oh I 100 TIMES like mine better. I like butterflying my entire chicken to lay it flat on a baking sheet. The problem is that sometimes I pay $8+ for the raw chicken vs. Costco's $5 chicken. LOL!!!!

I should add that my hubby is NOT a big chicken fan. So.... hubby and Bianca eat the two breasts and don't touch the dark meat.

Totally! I've always found it funny that you can get a cooked chicken for the same or lesser cost than a raw one.
 
I don't ever buy rotisserie chicken. *ducks*

I don't like eating off the bone or having to pick it off the bone & skin. I buy chicken tenderloins and ONLY tenderloins for the same reason.
 
I miss the Costco chickens. I almost always bought two - one to eat that day and one to freeze, either before or after picking the meat off & making stock from the bones. Any Costco is at least 25 miles away and usually more than an hour drive. Since I'm no longer volunteering at the Detention Center which is practically across the street from one, I haven't had one in CoronaTime.

I do spatchcock my turkey any year we have one but almost never buy a whole chicken any more. I imagine it might taste better but not at twice the Costco price. And dh really only eats white meat so I have a lot to eat cold (yes @Tree City !) or made into something else.

Costco isn’t close to us either but thankfully Sams club is. We like the white meat best and will eat the legs too. I have to hide the dark meat chopped small in soups and casseroles.

my girls and some of my sisters in law are the same way. :giggle My mom didn’t give us a choice we all learned young how to cut up a whole chicken.
