--------------------------------------- Journaling: "We have been watching YouTube and one of our favorite channels, “What’s for Tea”, with Cheryl from Scotland. One day she shows what she bought at the market for the week, and on Sundays she shares her menu and photos of what she made for “Tea” (dinner) that week. This meal has fascinated us for a while now... “Tuna Mayo and Jacket Potato” so we decided to make it for dinner, pairing it with Arugula (Rocket) salad. I made my Tuna as I normally do....1 can of solid white tuna in water, (shredded), dried minced onion to taste and 1 tablespoon of Mayo + a little extra so it is not dry. I baked us each, a round medium sized russet potato (we do not have “Jacket” potatoes here like the UK sells) at 450° F for about an hour. I like my potatoes to have a crunchy skin. We opened up the potato, added a little bit of shredded cheddar cheese and then added a scoop of “Tuna Mayo” on top. It was really funny as we were skeptical of the combo. Yes we love baked potatoes and we love Tuna salad, but together??? Boy were we surprised! This is a new meal to our dinner arsenal It really worked and we loved it for a nice Summer meal! "
Tuna Mayo & Jacket Potato Recipe:
-1 can of solid white Tuna (drained and shredded.) -Dried minced onion to taste. (About 1 Tablespoon) -1 Tablespoon Mayo + a dash more -2 Russet medium round potatoes (or Jacket potatoes) -Shredded Cheddar for sprinkling
Directions:
Make your Tuna Mayo... in a separate bowl, shred your tuna. Sprinkle in your minced onion, & add mayonnaise. Mix well until all incorporated Place in refrigerator to chill.
Bake your potatoes as normal to your liking. (I bake for about an hour at 450° F so it has a crunchy skin.)
Cut a plus sign on top of potatoes and open up potato. With fork, just fluff and loosen up the flesh of the potato.
Add a sprinkling of cheddar cheese to taste & dollop a scoop of “Tuna Mayo” to the top of the potato.
Serve with a side salad. Bon Appétit!

@marijke Marijke thank you.. you should really.. we never thought the combo would work, but it really does! I do not like a "wet tuna salad"... I usually use 1 Tablespoon of Mayo per can of tuna.., if it is too "tight" I add a little more mayo but just enough. I do not like swimming tuna Hugs.. If you try it, please let me know what you think!
