Journaling: B, E, & I picked one row of beets. B washed all the beets outside. I then scrubbed them clean. Once ready we sorted them into piles of large, medium & small. Then put them in the instant pot starting with the large ones for 13 minutes. Then the medium batch at 10 minutes & last we did the small at 8 minutes. Cooled them enough to take the skins off, diced into cubes, load the hot jars, cover with boiling water leaving 1” headspace and then putting the lids on. E helped load the jars into the pressure canner, then followed the canner instructions for beets. Chioggia Beets do not hold their color when heated thoroughly but they are still very tasty. We started with 24lbs of beets and ended with 11 quarts.

That is a lot of beets. I loved reading your story and I learned a little about canning (even though it is unlikely I ever will). I love the layered background with the print strips visible at top and bottom
LOVE LOVE LOVE Beets! How neat your page is! How cool that you canned your beets and now have 11 quarts. I would be in heaven. Hubby usually makes me beet salad with feta and arugala or spinach with a balsamic drizzle and it is my fav but I like beets every way you can serve them.. this looks fabulous and what a lot of work! Thank you for sharing Jessica, and for walking us through the process of canning them with your journaling. You page is amazing!

I have only ever done water-bathed canning - so for us this was a first at pressure canning! Thanks so much @umyesh for the challenge and for leaving me a kind note!
