Slow Roast tomatoes are delicious, brush a tin with olive oil, season with salt, pepper & herbs (I use oregano, basil, parsley & garlic salt) and roast for at least 3 hours in very low temperature, can be done on a slow cooker, amd they keep in a glass conteiner in the fridge for up to 3 weeks.
