12/31/20: We celebrated New Year's eve with various hors d'oeuvres and a sparkling (virgin) cocktail. Here's to 2021. Please, Lord, make it better than 2020!
1/6/21: cont'd:
I knew T---- would be a disaster as President, but I never dreamed so many Republicans would drink his Kool Aid. So proud of our former Governor [Kasich] who never even took a sip.
AMISH CHICKEN CORN SOUP
½ medium onion, chopped 1 t salt
1 rib celery, chopped 3/4 t pepper
½ c shredded carrots 6 c water
1# chicken breasts, cubed 1 c uncooked noodles
2 ½ t chicken "Better Than Bouillon" 1 can cream-style corn
pinch Cayenne 1/4 c butter
Lemon/lime juice
Place first 9 ingredients in Dutch oven; bring slowly to a boil. Reduce heat; simmer, uncovered until chicken is no longer pink and vegetables are tender, about 30 minutes. Stir in noodles, corn, and butter. Cook uncovered until noodles are tender, about 10 minutes, stirring occasionally. Finish with a splash of lemon/lime juice.

1/12/21: We finally got around to making chicken noodle soup! We forgot the CHICKEN when we sent in the Kroger order. Had to buy it at Giant Eagle!
Ready for the freezer.
