Journaling: Start with a Good Homemade Bone Broth | I cook my chicken bones/carcasses for 1 hour, in the instant pot along with a gallon of water, 1 tbsp real salt, the tops & bottoms of carrots, onion skins, and parts I cut off celery that normally would be thrown away/composted. These make excellent broth. I set my wide mouth pints, a funnel and strainer to strain the broth when done. | End with a Delicious Creamy Chicken Sourdough Noodle Soup ***
1 Whole Chicken
2 tbsp Butter
1 tsp Black pepper
1 tsp Salt
1 tsp Garlic Powder
4 cups Water
Add butter to Instant Pot. Set to Sauté. Combine salt, pepper & garlic powder. Sprinkle spices over chicken. Brown chicken in the instant pot till golden.
Take chicken out, place trivet at the bottom. Set chicken on the trivet & add 4 cups of water.
Set to Meat/Stew for 30 minutes (for about a 4lb-5lb bird).
Once the chicken is done, let it natural release for at least 10 minutes. Once done, take chicken out and set aside to cool. Strain leftover broth to add to soup.

1/2 of a Whole Cooked Chicken
2 tbsp Butter
3 carrots diced
3 stalks Celery diced
1 small Onion(s) diced
8-10 cups Chicken Broth
½ tsp Garlic Powder
2 tsp Salt
¼ tsp ground black pepper
¼ tsp paprika
¼ tsp dried parsley
¼ tsp thyme
3 tbsp Butter
1/4 cup All-Purpose Flour
1 1/2 cup Farm Milk (or 1 cup milk & 1 1/2 cup cream)
12 ounces Sourdough Pasta
In a large soup pot over medium heat, melt 2 tablespoons of butter. Add the carrots, celery, and onion, and sauté until tender -about 5 minutes. Pour in the broth, then bring the mixture to a boil. Add the seasonings and noodles, then boil for 15 minutes or until pasta is al dente.
While the above is going in an skillet or pan, add 3 tablespoons of butter and melt with medium-low heat. Whisk in the flour and cook, stirring constantly for 1-2 minutes or until it turns a pale golden brown. Slowly pour in the milk whisking constantly until a smooth paste forms. Add the mixture into the large pot - stirring constantly while adding.
Add the chopped/shredded chicken and continue cooking for about 5 minutes.

@Lynne-Marie Thanks! Sometimes we use our homegrown carrots & our own chickens. Hopefully next year it will be milk from our cow, and maybe if I ever figure out how to make these sourdough noodles because they are so so good! ♥
