One of the highlights of our trip to Italy in 2014 was the time Robbie and I spent in Lucca. We chose to visit Lucca not only because it is a gorgeous Tuscan town, but because of Chef Paulo’s Cooking School. Paulo ran a school that was part hotel, part school. People could visit and stay for a week, if they wished, enjoying the beautiful Tuscan scenery and taking daily cooking classes. We only planned for a day, learning how to make risotto, veal scallopini, and other fabulous Italian specialties. We wished it could have been a week.
