@*sylvia* actually we do not have jacket potatoes here in the US (This is a Scottish thing I believe)... We use a regular russet potato that I bake as normal. The tuna I make using 2 cans of albacore solid white tuna in water strained/drained, I mash it up and add 2 tablespoons of mayonnaise (1 tablespoon per can) I add some dried minced onion and mix that well. Once the potato is done, we slice open, add a little butter and salt to potato, then sprinkle potato with some shredded cheddar cheese, then a large dallop of the tuna salad on top of the potato. We add/sprinkle a bit of extra cheddar on the top and garnish with some spring onions. YUM! ... Let me know if / when you try it, how you like it!
