Bombay Mince
[stupid name, but it's Indian spices, guess they thought this was a good name?]
1 heaped cup vegan mince
1 onion
oil for frying
2 tsp garam masala spice
1 tsp salt
1 can of crushed tomatoes
1 can of sour cream
[the Swedish brand has one pre-spiced with bellpepper and chili]
1/2 cup peanuts
For serving:
Basmati Rice
Banana
Coconut flakes
Cucumber
Prepare rice according to packagins. Peel and chop the onion. Fry the onion and the mince in oil in a frying pan. Add garam masala for the last few minutes. Add salt, crushed tomatoes and sour cream. Let simmer for about 10 minutes. Add the peanuts. Serve the mince with rice, sliced banana, coconut flakes and diced cucumber.
Found this recipe in a cookbook from Arlaköket [Swedish dairy company]. The original recipe called for minced lamb, but I veganized it and used vegan mince instead. Left out the raisins of course, as you always should do if a recipe calls for it. It was so delicious even though it was such a simple recipe. I definetely most cook this again! Everyday food that taste like party food!
