Journaling reads: After staying up all night reading the “Vegan Meringues Hits & Misses” facebook group, I convinced Eugene to try making vegan meringues with me using aquafaba. This was my first time ever using aquafaba, the supposedly magic “chickpea water” (or chickpea slime as I describe it). MAGIC INDEED! We watched in awe as the aquafaba whipped, getting glossier and stiffer by the minute. The resulting meringues were absolute perfection in texture and flavor. It had been years since I’d been able to have meringue, and the texture took me back to being a young teen in Moscow falling in love with the light-as-air Russian “beze” (kiss) cookies.
