Cauliflower - carrot soup - my new favourite ...
- Roughly chop the shallot or onion and stew them in fat.
- Cut the cauliflower and carrots into pieces and stew with them.
- After 2 minute add water, 3 stock cubes (chicken and garden herbs) and salt and pepper.
- Let it cook for 15 minutes.
- Add 2 tablespoons of cashew nuts and parsley and a dash of cream.
- Blend the soup and add water at - will depending on how thick you want the soup.
- The soup is super tasty with a little cream, fried onions and/or croutons.
