I love your "plant-based" page! I have always struggled with salads but then I struggle to eat veggies in general. If it's any consolation, we had salad almost every night growing up and I still don't like them but our salads were pretty much your standard restaurant "house salad" from the 80s -- iceberg/romaine lettuce, tomato, cucumber, with oil & vinegar. Like you, I discovered salads could be good through restaurant salads and Paradise Bakery and I try to make more interesting salads when I make them. Anyhow, I loved reading about your journey and you've re-inspired me to try harder!
Taking steps towards a healthier life can be more difficult than getting back on a littoral horse. It’s all about Newton’s laws of motion: First Law: An object at rest stays at rest, and an object in motion stays in motion with the same speed and in the same direction unless acted upon by an unbalanced force. Second Law: The acceleration of an object is directly proportional to the net force acting on it and inversely proportional to its mass (F=ma). Third Law: For every action, there is an equal and opposite reaction. Taking action for change requires force and is met with resistance . The greater the inertia, the greater the force required. I keep reminding myself of that on my own path to health and fitness.
