I honestly cannot understand the pairing eggs with avocados.... to us in Brasil (before the world went global with the social media and general net communication thing) avocado is something to eat with lemon and sugar, make mouse with condensed milk (de-li-cious!) or make smoothies mixing with milk & banana, sometimes oats.... (yeah we were making smoothies waaaaaay before the world went bananas about them! LOL) In Argentina yes, is called "palta" and is something to put in canapés, or mix in salads, but it was always something you would get in parts, weddings, that kind of things, in the 80s it started showing up in new wave (very expensive) restaurants... but pairing it with eggs? nah, not for me... but Sarita? she LOVES it!!! I just discovered at least 200 photos of hers eating some kind of meal that involves this combination!!!!
