YUMMY!!!!

    as most of you know.
    i'm trying AT LEAST one new recipe a week this year.
    part of a new year thingy for me. ROFL
    i HATE to cook.
    but picking out new recipes has actually been fun.
    and most of the meals have been a hit! not a miss.
    woohoo!!!

    but tonight...
    i made the YUMMIEST meal.
    (it helps that my kids LOVE chicken and rice in all combinations.)

    MANDARIN CHICKEN WITH RICE:

    4 chicken breasts
    cooking spray
    2/3 c. sugar
    1/4 c. soy sauce
    1 T lemon juice
    1 T. vegetable oil
    1.2 tsp. minced garlic
    1.2 tsp. ginger powder (i hate ginger so i left it out.)
    4 tsp. cornstarch
    Rice, cooked

    Spray chicken breasts with cooking spray. Grill 4-6 minutes per side or until done. (it was too cold out to grill so i just cooked them in a frying pan.)
    Chop chicken into bite-sized pieces. set aside. Combine sugar, soy sauce, lemon juice, oil, garlic, and ginger in a small saucepan. heat over medium heat until the sugar is dissolved, stirring often. bring to a boil. combine water and cornstarch in a small bowl. add to saucepan, stirring often. reduce heat and simmer 5 minutes or until sauce thickens. pour sauce over warm chicken and serve over rice.

    That looks yummy, and easy, two of my criteria for cooking. LOL

    This does sound very yummy! I think I might try this! And jacque, I HATE ginger too! I would totally leave it out!

    We are so trying this tonight! I've been making teriyaki chicken with veges and rice lately so this is right up my alley!!!
