as most of you know. i'm trying AT LEAST one new recipe a week this year. part of a new year thingy for me. ROFL i HATE to cook. but picking out new recipes has actually been fun. and most of the meals have been a hit! not a miss. woohoo!!! but tonight... i made the YUMMIEST meal. (it helps that my kids LOVE chicken and rice in all combinations.) MANDARIN CHICKEN WITH RICE: 4 chicken breasts cooking spray 2/3 c. sugar 1/4 c. soy sauce 1 T lemon juice 1 T. vegetable oil 1.2 tsp. minced garlic 1.2 tsp. ginger powder (i hate ginger so i left it out.) 4 tsp. cornstarch Rice, cooked Spray chicken breasts with cooking spray. Grill 4-6 minutes per side or until done. (it was too cold out to grill so i just cooked them in a frying pan.) Chop chicken into bite-sized pieces. set aside. Combine sugar, soy sauce, lemon juice, oil, garlic, and ginger in a small saucepan. heat over medium heat until the sugar is dissolved, stirring often. bring to a boil. combine water and cornstarch in a small bowl. add to saucepan, stirring often. reduce heat and simmer 5 minutes or until sauce thickens. pour sauce over warm chicken and serve over rice.
