What's for dinner.....

I have no clue..its just me and the kids tonight. What's on the menu for you?
 
i'm thinking homemade pizzas. on the little sandwich flatz.
 
luckily we got invited over to dinner last night. whew... dodged that bullet... tonight i'm making one of the familys faves... plus it's easy peasy throw together in an instant type meal.
taco stack ups.

doritos
taco meat
black beans
cheese
corn
olives
lettuce
tomatoes
sour cream
salsa
and homemade ranch

each kid makes their own creation and it can all be served at room temp. makes a perfect meal for this busy coming and going family AND for when temps are hot and it's painful to bake!
(ps, you GOTTA use the homemade ranch -that really makes this dish delish!)

I just took out a bag of marintated chicken tenders I had in the freezer. I buy in bulk and then put them in gallon sized freezer bags with a bottle of marinade. I'm headed to work, so Rick will bbq these up for us with some veggies. Tonight is buy one get one pizza's at the boys favorite place, so I'll pick those up for the boys. Rick and I can have leftover chicken for lunches or with a salad later (trying to eat better!!)
 
I need to run to the store while my oldest is in swim practice to grab some food. I've been in a cooking slump for a while. Maybe we need a new recipe thread!
 
Mmm, Jacque your taco recipe looks heavenly! :wub I might have to try that one night!
I'm thinking for tonight I'll either do steak or chicken drumsticks. Not sure yet!
 
We had a roast with carrots and potatoes in the crockpot on Sunday and have leftovers from that. For leftovers with that, we always make homemade biscuits and then cut up the potatoes, carrots and meat and eat it over the biscuits like a stew--yummy! always reminds me of childhood!
 
Mmmmm....Jacque that sounds amazing! We never have chips on hand, which causes Husband much distress, but I may have to grab all of the ingredients next store run.

Tonight, we're having THIS fried rice with some leftover grilled chicken thrown in.
 
I'm making mac and cheese (the cauliflower puree version... tee hee hee... so sneaky) and some boneless ribs I need to cook before they go astray.
 
It was just me and the kids here tonight too, and I am NOT a cook. The kids had meatball sandwiches, and I had a ham and cheese. Exciting stuff. LOL :p
 
I was playing with the kids outside today and I looked at my clock about about 4:15 (about 15 minutes before my husband leaves work) and realized not only had I not made dinner, but I hadn't even taken anything out of the freezer. I had to call him up and have him bring dinner home. ha, luckily he doesn't mind :)

I made lasagna... which is my 6 YOs fav and usually he sniffs it out before I'm finished and then bugs me or stands in front of the microwave watching the timer count down until it comes out of the oven. LOL. Tonight somehow I surprised and he was so excited. It was so cute! :)
