I am doing Keto and it works for me. There are some recipes that I use over and over. I thought it would be fun to assemble a few of them here. You don't have to make a recipe page, but oh I tell you, they are so fun to make! This is a recipe for hash browns made with shredded cabbage. Many diet recipes are okay substitute, this is one my kids love, my friends can't believe it is cabbage and I eat almost every day! So, if you have a hint or recipe you would like to make a page or just share encouragement, please do so. I will be adding recipes on a weekly basis, and maybe more depending on time!

It was really easy! And I rolled it wrong. I did it slightly different. I have a cast iron pot, so I sauted the zucchini and stuff in it, then put the red sauce in the bottom of the pot and finished the recipe instead of using another pan. You can cook the lasagna noodles ahead of time, and sauce and sauce ahead of time ( I make a huge pot and freeze it in meal sized servings) and the zucchini cheese mixture comes together super fast! Tasty: yes! Filling too. Even the 9 year old had seconds and told me to put it in rotation.
We love cabbage, too! I cut it into 1-inch slabs, spray it with olive oil, add some salt and pepper and put it on the grill until charred and tender. Here's another recipe if you have an Instant Pot. (ignore the cauliflower pin. I confused my veggies.)
