What's on the menu this week?

side question: do you make ONE dinner for your family or one main meal plus little extras for picky eaters?

I usually just cook for myself, but my mom (who I live with) and I are trying to do better at preparing meals for the week and taking lunch to work. Mom made some beef stew. I made lasagna and bought lots of salad stuff. So we have lots of good stuff to get us through the week!

I will make mac and cheese or something for the kids if I know they will find what I make to be TOTALLY atrocious, but normally just one meal and they can take it or leave it.

    This week I'm making:

    Tuna Noodle Casserole
    Spaghetti and Meatballs
    Chicken Noodle Casserole
Layered Enchilada Bake (from the dinner thread I posted the other day)

I'm not feeling overly fancy, obviously. :D

I just updated my blog with Menu Plan Monday. It is seemingly comfort food week at our house. LOL. I guess that is the fall back position when planning under stress.

    Tuesday: Pork Carnitas
    Wednesday: Chicken Caesar Salad
Thursday: homemade baked mac and cheese
    Friday: Out
    Saturday: Spaghetti w/Tim's italian meatballs
    Sunday: party food

    hmmmm....

in answer to your side question, I have always added side dishes for picky eaters. My pickiest eater is still an extremely picky eater even at 26 years old. He's been back home with us for the last few years, and it's been difficult. I'm really looking forward to him moving out this year. I will be so happy to go back to having creative and more healthy side dishes when he's gone.

    ok...meals:
Monday: Buffalo Chicken strips, white shells and cheddar and green salad (with cranberries, pecans and goat cheese)
Tuesday: usually this would be pizza night and it still might be, but I bought some brussell sprouts on the stalk at TJ's yesterday, and I'm dying to have those, so maybe it will be BBQ'd Tri Tip strips, Brussel Sprouts and some linguini (for the picky eater)
Wednesday: Meatloaf and mashed potatoes. Salad
Thursday: BBQ chicken and whatever my dh puts together to go with it since I'll be at work
Friday: I work late, so men are on their own
    Saturday: Maybe eat out...
Sunday: I'll have to go grocery shopping!!

I end up cooking extras several times a week because of allergies and the vegetarian. There are only a few dishes that fill everyones needs and that all of us like.

    Tues- veg taco soup
    Wed- sub sandwiches
    Thurs- chicken wild rice soup
    Fri- chili
    Sat- pizza

This is awesome. You are giving me tons of ideas!

This week and next our menu is so CHICKEN. It seems like every night we have chicken. Chicken parmesan. Chicken sandwiches. Spaghetti with chicken. Chicken pita pizzas. LOL. But it's because we are trying to use what we have and stay under budget on food b/c in less then two weeks we are on a cruise.

We try to not have too many non-family meals during the week. However, it happens atleast once. I always have mac n cheese, raviolis and canned green beans as back ups for my daughter.

No extra sides here.....It Is What It Is! (But I sympathize with those that have little ones that are or can't eat what they want).

Monday - leftover brisket and loaded mashed potatoes
    Tuesday - homemade pizza
    Wednesday - soup & sandwiches
Thursday - leftovers or Garbage Night
Friday - Dinner out w/ friends

    Monday: Tuna Casserole
    Tuesday: Macaroni casserole
    Wednesday: Meatloaf
    Thursday: Chicken and Dumplings

I usually do groceries at the end of the week for the following week and that's how I usually decide what we're having for the weekend. :)

Well the menu here is totally boring when it's just me and the bug and menu "planning" as it normally exists totally falls to the wayside. This week we're having: chicken, black bean tortilla soup, turkey wraps, broccoli slaw.

Bugga is terribly picky but I usually offer her whatever we are eating plus something I *know* she will eat (and that list is very, very very short).

Side note: Lauren did you ever decide what to call your food blog? I probably totally missed that but had been thinking of you!
